NARIYAL BURFI/FRESH COCONUT BURFI /नारियल की बरफी
Ours is the land of festivals. This is culturally so prosperous that some of the other festivals whether big or small, are celebrated here every day. And this is a custom to prepare sweets and pudding on these festive days. Most of our sweets are milk-based so they are creamy and rich to eat. There is some variety of sweets which are meant to eat on fast or upvaas. These are cereal or grain-free and based on milk and some fruits. Coconut burfi is one of those which too can be consumed as a fasting dish
This coconut burfi is prepared with fresh coconut and milk. So, undoubtedly rich, creamy, and fudgy with a divine taste (after all the coconut is believed to be an auspicious or divine fruit) To prepare this burfi, grated coconut is cooked in milk until it reaches a thick and fudge-like consistency. This is set finally to cut into bars and garnished with assorted nuts

INGREDIENTS REQUIRED
• Fresh coconut/nariyal – 1 big(1 cup when grated)
• Full cream milk – 1/2 lt
• Milk powder – 1 tbsp
• Sugar – 2 tbsp or to taste
• Green cardamom/choti ilayachi – 3-4(deseeded)
• desiccated coconut and finely chopped nuts for garnish
INSTRUCTIONS
1- Firstly, place the butter paper in the tray and oil it. Keep aside
2- Remove the outer skin of coconut with a sharp knife or a peeler
3- Next, grate the coconut with a grater
4- Now, take a heavy bottom kadahi and keep the milk for boiling. Add grated coconut/nariyal and allow the mix to boil at medium flame. Stir at intervals.
5- When the mix gets thickens, add milk powder, cardamom seeds and sugar.
6- Keep stirring continuously to prevent from burning
7- In a few more minutes the mix will come together and leave the sides. Add 1 tsp ghee to prevent it from sticking at the bottom
8- Transfer the mix to the prepared thali or tray and leave to set. Spread the nuts and the desiccated coconut for garnish and press them with a spatula
9- When the burfi is set, lift the fudge with butter paper. Cut the burfi into desire sized pieces, So divine coconut burfi is ready to enjoy
NOTES AND TIPS
1- You can blend the fresh coconut in the grinder instead of grating it
2- If you don’t want to spend much time boiling the milk-coconut mix, You can use condensed milk for instant preparation.
3- Refrigerate the burfi to set. This will help in clean cuts
