OATS-RAVA UTTHAPAM/ AN INSTANT UTTHAPAM WITH SOOJI AND OATS

UTTHAPAM, A classic South Indian pancake, loaded with seasonal veggies. Authentically, the batter is prepared with the rice and lentil by soaking and fermenting for hours. But if the same batter is not available, an instant batter can be prepared by adding rava to the curd or buttermilk. The instant batter is instantly fermented by adding some baking soda or fruit salt. Any vegetables can be added on the top of the utthapam while it is cooking in the pan. This filling pancake can be enjoyed in any course of meal, from breakfast to the dinner with different chutneys and sambhar

INGREDIENTS REQUIRED

•  Curd – 1 cup
•  Water – 1/2 cup or as required
•  Fine sooji /rava – 1/2 cup
•  Plain oats – 1/2 cup
•  Finely chopped onions – 1 no.
•  Finely chopped capsicum – 1 no
•  Coarsely chopped tomatoes – 1-2 nos
•  Oil – 2-3 tbsp
•  Salt – 1 tsp or to taste
•  Red chilly flakes(fresh or dry) – 1 tsp
•  Crushed black pepper – 1 tsp
•  Cumin/jeera – 1 tsp
•  Grated ginger – 2 tsp
•  chopped coriander and curry leaves

INSTRUCTIONS

Take a mixing bowl and add curd. Add salt, red chilly flakes, curry leaves, crushed pepper, cumin and ginger. Add water and mix well with a wire whisk

Add sooji and oats. Mix and keep aside for 15 minutes to set the batter

Heat dosa pan whilst add chopped veggies and baking soda to the batter.
* Veggies and salt release water, so no need to add extra water.

Add 1 tsp of oil on the pan and drop 2 ladlefuls of batter and spread in a circular motion. Add veggies on top and press them with the spatula. Also, add 2 tsp of oil on top

Turn the utthapam to cook the other side till perfection. Serve hot with chutneys

NOTES

*  You can add 2 tbsp rice flour in the batter to make the utthapam crispier

*  The batter can be prepared with buttermilk also. This can add a little sour taste in the utthapam
