PANEER TIKKA SANDWICH/ ANY TIME SANDWICH/पनीर टिक्का सैंडविच

I call this yummy sandwich ‘ANY TIME SANDWICH’ as this is a wholesome meal in itself. This is so filling that you can have them in any course of the meal. To make these sandwich, paneer or cottage cheese is first turned into everyone’s favourite PANEER TIKKA by grilling the marinated paneer with some other veggies. This prepared paneer tikka is finally stuffed between the two bread slices. This sandwich can be grilled on the open pan or in a toaster. Chutney, butter and the cheese slices along with paneer tikka make them ‘all in one’ a super yummy meal!!

INGREDIENTS FOR PANEER TIKKA

• Paneer/Cottage Cheese – 200 gms(cubed)
• Square onion slices – from 1 onion
• Tomato cubes – From 2 tomatoes (discard the inner pulp)
•  Hung curd/Thick yogurt (plain) – 1 bowl/100 gms
•  Roasted besan/gram flour – 1 tbsp
•  Mustard oil for marination- 1 tbsp
•  Mustard or any other oil for cooking – 2 tbsp
•  Salt, red chilly powder, haldi, roasted cumin powder – 1tsp each

INGREDIENTS FOR PANEER TIKKA SANDWICH

•  Bread slices – 10 (white or brown)
•  Coriander-Mint Chutney
•  Butter at room temperature – 3-4 tsp
•  Prepared Paneer Tikka

HOW TO MAKE PANEER TIKKA

1- Take a mixing bowl and add hung curd, mustard oil, besan/gram flour, salt and all the powdered spices mentioned above

2- Mix well and add paneer, onion and tomato cubes. Mix so well that these are marinated with the curd mix

3- Keep in the refrigerator at rest for 30 minutes so that this could absorb all the flavours

4- Heat oil in a pan and add marinated stuff. Cook/roast at low flame by turning time to time until they get the golden brown colour.

5- When paneer tikka is done, keep aside to cool a little and prepare for the PANEER TIKKA SANDWICH

6- Chop off the sides of bread slices and apply green chutney on top of half number of total slices

7- Spread PREPARED PANEER TIKKA on the chutney side

8- Place cheese slices on top

9- Cover with another bread slice. Apply butter on top and grill on a pan or in the toaster till perfection

10- Serve PANEER TIKKA sandwich with tomato ketchup and green chutney

NOTES

1- Feel free to add more veggies like bell peppers and zucchini

2- Paneer tikka can be grilled in the oven or the microwave at grill mode
