POHA IDLI/ INSTANT IDLI WITH POHA AND RAVA
Idlis in breakfast make me happy. I love these steamed savoury cakes more than any other dish. These are light, healthy and tasteful with sambhar and various chutneys. Mostly I add some veggies or green herbs in the idli batter to make them tastier. These are easy to carry, so the best option for the tiffin ideas
These poha idlis are prepared instant. When the fermented rice-lentil batter is not in hand, I prepare instant idlis with any flour. For this poha idli, I had ground dry poha and added some fine rava to make a batter with curd or buttermilk. Baking soda or the fruit salt can be added for instant fermentation. A few fresh green herbs make them so flavoursome. You too must try these idlis in your kitchen

INGREDIENTS REQUIRED
• Poha – 1/2 cup
• Thin rava/fine sooji – 1/4 cup
• Sour curd – 1/2 cup
• Water – 2 cups
• Soda bicarb/fruit salt/Eno – 1 tsp
• Salt – To taste
• Methi dana/fenugreek seeds – 1/4 tsp
• Red chilly flakes and pepper powder – 1/2 tsp each
• Finely chopped coriander leaves, curry leaves and green chillies – To taste
PREPARATION REQUIRED
1- Dry roast methi dana until the colour is changed a little. Take out and keep aside
2-In the same pan dry roast poha until it becomes dry. Allow it to cool completely(it takes 10 minutes)and grind with methi dana to make a powder
DIRECTIONS
1- Add water to the curd and whisk well
2- Add salt, red chilly flakes, black pepper powder and soda bicarb
3- Add powdered poha and sooji and keep to absorb the buttermilk for 7-8 minutes
4- Add chopped greens and mix. If the mix is quite thick, add sufficient water to make it runny
5- Fill the idli moulds with batter and steam till perfection
6- Serve the soft and yummy poha idlis with tomato-garlic chutney and mix veg sambhar
