The origin of chaat is said to be a few cities of Uttar Pradesh and the Old Delhi regions. Afterwards, it was popularized to the other parts of the country and the whole Indian subcontinent. Now we have a big range of chaat dishes to enjoy.
This particular chaat (Tamatar or tomato chaat) is the speciality of Banaras and popular after the name of this holy city, so known as Banarasi Tamatar Ki Chaat. This is as popular as the few others from Banaras, like Banaras Ke Ghaat and Banaras Ka Paan. This lip-smacking chaat is sold on each and every street and ghaats by street hawkers and vendors. The key ingredient is the cooked tomato masala with onions and aloo and served with some crunch like sev or mathri on top along with onions and green chillies

INGREDIENTS REQUIRED
• Tamatar/tomatoes – 6 nos(finely chopped)
• Boiled potatoes – 3 nos
• Onion – 1 big (finely chopped)
• Finely chopped ginger – 1 tsp
• Green chillies – 2 nos(finely chopped)
• Coriander leaves
• Salt – To taste
• Red chilly powder – 1 tsp/to taste
• Roasted jeera/cumin powder – 2 tsp
• Oil – 1 tbsp
INGREDIENTS FOR TOPPING
• Chopped onions
• Chopped tomatoes
• Crunchy Sev or Mathri
• Coriander leaves
• Green chillies
• Chaat masala
• Lemon wedges
METHOD
1- Heat oil and add cumin seeds, chopped ginger, green chillies and onions. Saute them until translucent. Avoid browning them. They must feel juicy
2- Add salt and all the powdered spices and cook for a while
3- Next, add chopped tomatoes and cook them until tomatoes are soft and a masala like consistency comes out
4- Add mashed potatoes and little water if the mix looks dry. Cook them for a while.
5- Mix everything well and drop the fresh coriander leaves at this stage
HOW TO SERVE lip-smacking BANARSI TAMATAR KI CHAAT
1- Take snack plates or patta dona. Add some portions of cooked aloo-tamatar masala to each as a first layer
2- Top them with chillies, lemon wedges, onion, tomatoes, coriander leaves, crunchy sev and chaat masala. Tasty tamatar ki chaat is ready to enjoy.
Notes
- You can add boiled green or white peas/matar to this chaat
