
| No matter what large variation of evening snacks we prepare these days, the most loved snacks among all of us are still pakoras or deep-fried fritters. The authentic way to prepare the batter is with besan/gram flour. I wanted a little change in the ingredients here, so I prepared the batter with green moong dal atta/flour to make these pakoras. A little rice flour was also added, which made them crispier. Any vegetables of your choice can be used to make these fritters. I have made them by dipping the potato-onion slices into moong dal batter and then deep-frying till they have their signature colour, golden brown * If moong dal atta is not available to you, the batter can be made by grinding the overnight-soaked green moong dal |

Ingredients –
• Green moong dal atta/flour – 1 cup or 100 g(store brought)
• Rice atta/flour – 1 tbsp
• Salt – 2
• Red chilly powder – 2
• Pepper powder – 1
• Chaat masala – 2 tsp
• Carom/ajwain seeds – 1 tsp
• Cumin/jeera – 1 tsp
• Sufficient water to make a batter neither too
thick nor too runny
• Sufficient oil for deep frying
• Thinly sliced potatoes and onions – 2 onions + 1 potato
STEP BY STEP
1- Add water, salt and other spices to flours and make a batter neither too thick nor runny. Keep at rest for 15 minutes

2- Whilst heat oil in a kadahi at medium heat for deep frying
3- Dip onion and potato slices into the batter and add to oil.

4- Deep fry pakodas both sides by flipping until the colour changes to golden brown

° Do not overload at 1 time otherwise the temperature of oil will get down and pakodas will absorb much oil
5- Serve the tasty moong dal pakoras hot with green onion-coriander chutney
