ALOO MASALA POORI/ A TASTY MASALA POORI

Poori, a deep-fried Indian bread, is an integral part of Indian cuisine, that is prepared with wheat flour dough. A few whole spices such as cumin, carom seeds, red chilly flakes, and salt are added while kneading the dough to enhance the flavours. For ages, the poori has been the first choice to carry while traveling for its longer shelf life.

This fried poori can be enjoyed with a number of Indian curries. This can be made plain, stuffed, or by adding other ingredients to the dough. Boiled potatoes and some regular whole and powdered spices are added to make such tasty pooris. These incredibly tasty pooris are called aloo masala poori in my family and are fondly eaten with Chana Masala and Vegetable Raita

This aloo masala poori has two parts to make. Firstly,  a dough is prepared to mix the boiled potatoes,  salt, and a few spices into the flour. This dough is kept at rest for 30 minutes. Finally, the pooris are deep-fried in hot oil until they turn golden brown on both sides. Sharing below the easy recipe of aloo masala poori with images

INGREDIENTS REQUIRED

• Whole wheat flour – 1 cup heaped/ (200 gms)
• Water to make a tight dough – 4-5 spoons or as required
• Boiled potatoes (grated) – 1 large or 2 medium
• Salt – 1 tsp or to taste
• Red chilly flakes (dried)  – 2 tsp or to taste
• Turmeric powder/haldi  – a pinch (1/4 tsp)
• Chopped coriander leaves – 1 tbsp
• Cumin seeds (jeera) – 1 tsp
• Carom seeds (ajwain) – 1 tsp
• Oil for the dough – 1 tbsp
• Oil for deep-frying  – Sufficient enough

HOW TO MAKE POORI DOUGH

1- Firstly, take a broad mixing bowl and add atta/flour to it. Add salt, turmeric powder,  cumin seeds,  red chilly flakes, oil,  and grated boiled potatoes.

2- Combine all the ingredients so well by rubbing them with your hand

3- Add little water at times and bring the dough together.  Knead a tight dough and keep it at rest for 30 minutes by covering it with a wet kitchen cloth

HOW TO MAKE ALOO MASALA POORI

1- Firstly, make  small balls with equal portions and flatten a few of them with a rolling pin (size of poori depends on your choice)

2- Whilst,  heat oil at high temperature in a kadahi
* Check the oil temperature by dropping a small dough ball. If it comes to the surface the oil is ready to fry the poori

3- Drop 1 poori and press it a little with a spatula into the hot oil. Soon it will inflate like a ball

4- Turn slowly the other side  to fry it golden

5- Take it out and fry the other pooris like it. Adjust the temperature from time to time. Most of the time, It should be on the higher side

6- Tasty aloo masala pooris are ready to enjoy with Chana Masala and Vegetable Raita
