CHILLI-GARLIC FRIED RICE

Chilli-garlic rice is a flavourful version of fried rice. This wonderful recipe turns simple plain rice into a very unique tasteful dish. Garlic and chilies are sautéed in oil and then mixed with cooked rice to complete this tasty fried rice dish . This chili-garlic rice goes with any Indian dal preparation or Indo-Chinese mix veg curried dish, Manchurian, chili chicken, chili mushroom, etc.

A very easy to make this rice dish requires a few ingredients and cooks in lesser time. To make this dish, the rice is boiled to each grain separated consistency and finally, a tempering of both red and green chilies and garlic is given to complete the dish. Although the flavours go to a bit spicer side but balance when eaten with other curries. A handful of coriander stems and leaves enhance the taste of this rice dish

INGREDIENTS REQUIRED TO BOIL RICE

• Long grain rice  – 1 cup
• Water to rinse rice – as required
• Water to boil rice  – 4 cups
• Salt – 1 tsp
• Oil – 1 tsp

INGREDIENTS REQUIRED FOR CHILLI -GARLIC FRIED RICE
• Boiled rice
• Oil – 1 tbsp
• Finely chopped garlic  – 2 tsp
• Finely chopped green chilies – 1 tsp
• Finely chopped fresh red chilly  – 1 tsp
• Salt – to taste
• Black pepper powder  – 1 tsp
• Chopped coriander stems – 1 tbsp
• Chopped coriander leaves – 1 tbsp

HOW TO BOIL RICE

1- Take a big vessel (saucepan) and add water to boil. Add 1 tsp salt and oil and mix

2- Add washed rice and allow the rice to boil at a high flame

3- It will take 10 minutes to cook the rice up to 98%. Make sure the rice should not turn mushy.  When the rice is done, sieve it through a colander and keep it aside

HOW TO MAKE CHILLI-GARLIC FRIED RICE

1- Take a wok or a frying pan and add oil. When oil is heated, add chopped garlic and sauté for a second

2- When garlic is sautéed,  add both types of chilies and stir

3- Next, add chopped stems of fresh coriander (these stems increase the flavour of fried rice)

4- Next, add boiled rice and combine

5- Now add salt and black pepper powder

6- Next, add chopped coriander leaves and combine all the ingredients nicely

7 – Tasty chili-garlic fried rice is ready to enjoy with any Indian dal preparation or Indo-Chinese mushroom curry dish
