CAPRESE SANDWICH
It’s too hot these days in Delhi.. mercury reaching almost 47°C….in this killing heat nothing other than cold summer salads and sandwiches are the life saviours. The sandwich prepared with fresh vegetables, cheese or paneer and some greens is one of the few dishes I like to have in this scorching heat and would feel happy to have them at any time of the day, from breakfast to the dinner time..would you too like to have them with some cool and refreshing drinks.
This Caprese sandwich is prepared with all those ingredients I use to make CAPRESE SALAD. I replace fresh mozzarella with paneer/cottage cheese because of its easy availability. Fresh and juicy tomatoes and the cucumbers add the chill and Basil, Tulsi or any other edible leaves add the freshness. Sharing the recipe of wholesome yet delicious grilled CAPRESE SANDWICH

ALL WE NEED
Bread Slices (white or brown) – 8-10
Fresh Paneer – 150 gms(sliced)
Tomatoes – 3-4 (sliced)
Cucumber – 2 nos( peeled and sliced)
Basil, Tulsi or Mint Leaves – 10-12 Nos
Butter – 2 tsp
Salt, pepper or any other seasoning of your choice – To taste
DIRECTIONS
Place all the veggies, paneer slices and the herbs on the bread slices. Sprinkle some salt, pepper or any other seasoning of your choice
Apply some butter on top of bread slices and grill to perfection
