CHUTNEY PANEER SANDWICH/PESTO-COTTAGE CHEESE SANDWICH

HI… SANDWICH LOVERS.. this drool-worthy sandwich is for those who always look for different flavours each time. Though there are countless ingredients which can be sandwiched between bread slices, yet paneer, cottage cheese or any other fresh and processed cheese make the tastiest sandwich. In India, fresh paneer or cottage cheese is loved by all, especially the kiddos who love paneer as a religion… This is their all-time favourite.. from breakfast preparations to the main course curries

For this sandwich, the paneer/cottage cheese is cooked with chopped onions and then coriander-peanut chutney is added. This chutney is prepared by adding roasted peanuts to the coriander leaves like pesto contains pine nuts with some greens. This chutney paneer is spread on the bread slices and a cheese slice on top is like a bonus to make it cheesier. This is finally grilled to enjoy in the breakfast… This sandwich is inspired by one of my appetizer dishes.. THE NUTTY PANEER

INGREDIENTS REQUIRED

• Paneer/Cottage Cheese – 200 gms(crumbled)
• Finely chopped onions – 1 no
• Oil/butter – 2 tsp +1 tsp
Coriander-peanut chutney – 2-3 tbsp
• Bread slices – 8
• Broken cashew or roasted peanuts(crushed) – 1 tbsp
• Mixed Italian seasoning – 2 tsp
• Processed Cheese Slices – 4 nos

DIRECTIONS

1- Heat oil or butter in a pan and add chopped onions. Cook until translucent

2- Now add crumbled paneer and cook for a while.

3- Next, add coriander-peanut chutney and mix. Now add broken cashew or crushed peanuts for the crunch

4- Allow this mix to cool and then spread on bread slices

5- Place cheese slices on top and sprinkle some Italian seasoning. Cover this with another bread slice

5- Brush some melted butter on slices and grill to enjoy in your breakfast

NOTES
The paneer-chutney mix can be prepared in advance. This can be stored in the refrigerator for two days
