Cheesecake is a tasty dessert which is creamy, velvety and rich.This is the best dessert when you desire to eat something cold and creamy.This is eaten chilled or frozen.This is made baked or no-bake variations
This is a layered dessert which has a biscuit base as a crust at the bottom.Its mid layer is the main layer which is dense, creamy and delicious.The top layer varies with your desire.I have topped this with few canned berries.
This Cheese Cake is baked with water bath technique as it keeps the cake moist and creamy.This technique does not let the cake dry as steam keeps it moist and soft.

INGREDIENTES-:
 
For Biscuit Base -:
Digestive biscuits – 25 units
Melted butter – 100 gms
For creamy layer-:
Cream cheese – 400 gms
Sour cream – 200 gms
Powdered sugar – 200 gms
Whole eggs – 2 units
Egg yolk – 2 units
Some dried or fresh or canned berries for topping
A spring-form cheesecake mould
Aluminum foil sheets – 2 units
A baking pan filled halfway with hot water
METHOD -:
First of all, cover the outer side of pan with 2 aluminium foil sheets and keep aside
For the base – crush the biscuits coarsely and add melted butter to it
Mix it well and set this in the bottom of the pan and keep in the fridge to set
.
Now beat cream cheese, sour cream, sugar and eggs to make a creamy mix.
Pour this mix over the biscuit base and keep the mould in hot water filled baking pan.
Bake the cake par 180℃ for 60 minutes in a preheated oven
When baked cool this to room temperature.If the cake wobbles in the middle, no worries, this will set in the fridge.
Refrigerate the cheesecake for at least 5 hours to chill.
Top the cake with dried or canned or fresh berries and serve
