CHEESY CORN ON TOAST
Cheesy corn on toast is a versatile open sandwich suitable for both breakfast and evening snacks. This option is particularly appealing to children, as it combines their favorite ingredients. As a convenient finger food, it’s an ideal choice for lunch boxes. Rich in vegetables and paneer, these toasts offer a nutritious and filling option.

INGREDIENTS REQUIRED
• Bread slices – 4 nos (white or brown)
• Boiled corn kernels – 1 cup
• Grated mozzarella cheese – 1/2 cup
• Finely chopped green capsicum – 2 tbsp
• Finely chopped red capsicum – 2 tbsp
• Grated paneer/cottage cheese – 2 tbsp
• Salt and Black peppercorns – 1/2 tap each
• Red chilly flakes – 1/2 tsp
• Italian seasoning – 1 tap
• Butter at room temperature – 2-3 tsp
DIRECTIONS
1- Take a mixing bowl and add all the ingredients except bread slices and butter. Combine all the ingredients nicely with a spatula
2- Spread a layer of butter on one side of bread slice (you can chop off the sides of bread slices, but I did not)
3 – Next, spread the corn-veggie-cheese mix on the other side of the slices. Add the slices to a pan with the corn side up.
3- Cover the pan with the lid. Keep the flame at a possible low. Within a few minutes the cheese will start to melt and the slice will become crisp at the bottom because of the layer of butter (sprinkle a few drops of water on the hot pan to create the steam. This will help to melt the cheese)
4- Within three-four minutes the cheesy corn toast will be ready. Cut each toast diagonally with a sharp knife or a cutter
5- Serve the tasty, healthy, and filling cheesy corn toast with tomato ketchup
