CHEESY CORN ON TOAST
Cheesy corn on toast is a delicious open toast which can be enjoyed both at breakfast and in the evening as a snack. This is a win-win toast for the kids b’cause both cheese and corns are their favourite. This finger food is a perfect lunch box idea for them. These toasts contain vegetables and paneer, in this way they are healthy as well as quite filling too

INGREDIENTS REQUIRED
• Bread slices – 4 nos (white or brown)
• Boiled corns – 1 cup
• Grated mozzarella cheese – 1/2 cup
• Finely chopped capsicum – 2 tbsp
• Grated carrots – 1 tbsp
• Grated paneer/cottage cheese – 1 tbsp
• Salt and Black peppercorns – 1/2 tap each
• Red chilly flakes – 1/2 tsp
• Italian seasoning – 1 tap
• Butter at room temperature – 2-3 tsp
DIRECTIONS
1- Take a mixing bowl and mix all the ingredients except bread slices and butter
2- Spread a layer of butter on one side of bread slice (you can chop off the sides of bread slices, but I did not) Next, spread the corn-veggie-cheese mix on the other side of the slices. Add the slices to a pan with the corn side up.
3- Cover the pan with the lid. Keep the flame at possible low. Within five minutes the cheese will start melting and the slice will become crisp at the bottom because of the layer of butter
4- Cut each toast diagonally and serve hot with the Italian seasoning and red chilly flakes on top
