SUMMER SALAD /WATERMELON-SWEETCORN SALAD
Salads are the best part of my everyday menu. Without salads, our meals are not completed. A salad plate not only adds colour but also freshness and nutrition. As summer approaches gradually, the cool fruits and vegetables are being loved to eat.
Watermelon, cucumber, and tomatoes are incredible to leave a cool effect on the stomach. I love to include broccoli in my diet, so this is a must-added veggie to this salad. Corn kernels are blanched and cooled before adding to this salad. The dressing is the ex-factor of this summer salad. Lemon juice, honey, olive oil, and pepper powder make it complete by balancing all the flavors

● INGREDIENTS REQUIRED
• Watermelon Cubes – 1 bowl
• Corn kernels(blanched) – 1 cup
• Oranges wedges – 1 orange
• Cucumber cubes – 1 large cucumber
• Broccoli florets (blanched)* – 6-8 small florets
● INGREDIENTS FOR DRESSING INGREDIENTS FOR DRESSING
• Extra virgin Olive Oil – 2 tbsp
• Honey – 1 tbsp
• Lemon juice – from 1 lemon
• Salt – 1 tsp
• Pepper powder – 1/2 tsp
● HOW TO MAKE SUMMER SALAD
• Take a mixing bowl and add all the fruits, blanched broccoli florets, and corn kernels
● HOW TO PREPARE THE DRESSING
• Take a bowl and add all the ingredients mentioned above under’ INGREDIENTS FOR DRESSING ‘
• Drizzle the dressing all over the summer salad and mix well with a spatula
• Serve the chilled summer salad with your meals
NOTES AND TIPS
* To blanch the brocolli florets, boil water in a saucepan and add broccoli florets. Allow them to cook for 2-3 minutes and strain them through a colander. Transfer them to icy-cold water to retain the crunch and color
