KADDU KA CHEELA /SAVOURY PANCAKES WITH PUMPKIN/कद्दू का चीला
If you seek for a super nutritious dish to have as the first meal of the day, then this kaddu ka cheela or pumpkin pancake is very perfect to have. Pumpkin is considered to be the healthiest gourd which is loaded with fibre, several vitamins and essential minerals which our body requires to stay healthy. Adding this vegetable in any form to your diet is so beneficial to the health.
I make various dishes with pumpkin and this savoury pancake is one of them. The puree of kaddu has been added to besan/gram flour to make these tasty cheelas. Any other flour can be added to make these pancakes weather ragi, oats or maize flour. The pumpkin puree goes well with any flour even farali atta to make pancakes for upvaas

INGREDIENTS REQUIRED
• Kaddu/pumpkin (unsweetened) – 250 gms(peeled and chopped coarsely)
• Besan/gram flour – 1 cup – 150 gms
• Ginger-green chilly paste – 1 tsp
• Salt – 2 tsp
• Red chilly powder – 1 tsp
• Roasted cumin powder – 1 tsp
• Haldi/turmeric powder – 1/2 tsp
• Curd – 1 tbsp
• Oil , butter or ghee – 2 tbsp
• Sufficient water to make a batter of pouring consistency(neither too thick nor too runny)
STEP BY STEP
1- Add chopped pumpkin to the blender and make a puree. Add some water to ease the blending (if the seeds are tender, I blend them along with the pumpkin)
2- Take a mixing bowl and add all the ingredients except oil/ghee written under ‘INGREDIENTS REQUIRED) along with pumpkin puree. Whisk the batter with a wire whisk and set aside at rest.
3- Heat a pan and little oil or ghee. Drop a ladleful of batter and spread in a circular motion. Keep the flame at low-medium
4- When one side is cooked, add some ghee/butter on top and flip to cook the other side until golden
5- Make all kaddu ke cheela like this and serve this delicious and nutritious breakfast with tomato ketchup or green chutney
