Rice poha or flattened rice is a quick meal which is eaten in breakfast or as an evening snack with tea. In western n central Indian states like Maharashtra, Gujarat and Madhya Pradesh, it is a widely relished dish. This dish is very light yet quite fulfilling. As loaded with seasonal veggies, it becomes flavoursome, healthy and easily digestible. I cook this dish for breakfast with loads of veggies, especially these days when the market is flooded with numerous seasonal vegetables

INGREDIENTS -:
1- Rice poha – 1 cup or 250 gms
2- Chopped onions – 1/4 cup
3- Chopped potatoes – 1/4 cup
4- Chopped carrots – 1/4 cup
5- Chopped green beans – 1/4 cup
6- Chopped broccoli – 1/4 cup
7- Salt, red chilly powder, turmeric powder – 2 tsp each
8- Cumin seeds – 1 tsp
9- Oil – 2 tbsp
10- Raw peanuts – 1/4 cup
11- Lemon juice – juice of 1 lemon
12- Green and red bell pepper -1/4 cup
13- Curry Leaves – 6-8 nos.
14- Chopped green chillis – 1 tsp
15- Sufficient water to sprinkle on poha to soak (quantity of water depends on the quality of poha)
METHOD – :
1- First of all, sprinkle sufficient water to soak poha to make it soft and keep aside
2- In a pan or kadhai, heat oil and fry peanuts until brown, and take them out
3- In the same oil fry potato cubes and fry. Take them out and keep them aside
4- Now add curry leaves, green chilies, and cumin seeds, when crackle, add chopped vegetables and stir for 2 minutes.
5- Add all the powdered spices and salt
6- Add soaked poha and mix everything together
7- Cook for 2 minutes covering the lid
8- Switch off the gas and add lemon juice and mix well
9- Serve poha hot with fried peanuts over
