As we love vegetables, so it’s an opportunity to use them in various dishes from breakfast to dinner. Pan-fried savoury fritters or rostis are our favourite breakfast choice as these are so filling as well as healthy

CAN I ADD OTHER VEGETABLES TO THE ROSTI WITH POTATOES?

YES, OF COURSE!

Rosti is a swiss side dish prepared with raw or parboiled potatoes which are grated and then pan-fried. Other additional ingredients might be added to it. I use to add many other veggies which are grated or chopped finely. An egg is a good binding medium and makes it tastier as well. This is an ultimate choice of breakfast to kick start your day

ALL YOU NEED FOR THE ROSTI

• Medium-sized potatoes – 2 (grated)
• Medium-sized carrots – 2 (grated)
• Green capsicum – 1-2 ( finely chopped)
• Medium cauliflower florets – 3-4 (grated)
• Spring onions – 2 nos (finely chopped)
• eggs – 1-2 nos (depending on their size)
• Cornflour – 2 tbsp
• Salt – 2 tsp or to taste
• Crushed black pepper – 1 tsp or to taste
• Mixed Italian seasoning – 1 tsp or to taste
• Olive or any other cooking oil – as required

HOW TO COOK A ROSTI

1- Take a mixing bowl and add all the ingredients mentioned above except oil. Mix well to make a thick batter

2- Add 1 tsp oil to the frying pan and switch on the flame. When the oil is medium hot add 1 ladleful of batter

3- Cook each side golden brown adding sufficient oil

4- When all the fritters are ready, serve them in the breakfast with green chutney and tomato ketchup

NOTES

If you want to skip the eggs, add extra cornflour to bind the batter of the rosti
