Mix veg shahi bhurji is a tasty dish cooked with several seasonal veggies and this dish can be served as a side dish for the main course. As the market is flooded with fresh and juicy seasonal vegetables, so I feel pleasure to cook this tasty dish out of them. I know that after a few weeks as summer will approach all these seasonal veggies will disappear so I cook this dish quite often in winters
There are so many methods to cook a mix veg dish. Some are made dry and the other ones are with gravy.I have cooked a dry version of this dish with a little sweet and mild taste as I have finished this with fresh cream and mixed nuts. Finely shredded veggies are cooked together to give it a bhurji like texture and nuts make it shahi or royal. Your guests will certainly relish having this on the dinner table

Servings – 4

Grated cauliflower – 1 cup
Finely chopped onions – 1 big sized
Finely chopped carrots – 1/2 cup
Finely chopped beans – 1/2 cup
Blanched peas – 1 cup
Finely chopped ginger – 1 tsp
Finely chopped garlic – 1 tsp
Finely chopped green chillies – 1 tsp
Cumin seeds – 1 tsp
Salt – to taste
Red chilly powder, coriander powder, turmeric powder and garam masala powder – 1 tsp each
Fresh cream – 1 tbsp
Mixed nuts – 2 tbsp
Oil – 2 tbsp

1-  First of all, fry mixed nuts golden brown and take out
2-  In the same oil add cumin seeds, ginger, garlic and green chillies and stir them
4-  Add onions and roast till the colour changes a little bit
5-  Next, add cauliflower and roast until brown. This will help to get rid of the smell of raw cauliflower
6-  Add beans and carrots now and roast them stirring continuously
7-  Add boiled peas and mix well. Time to add salt and powdered spices
8-  Cover the pan with a lid so the veggies become soft
Add fresh cream and cook well until the dish leaves the oil
Add fried nuts to finish the dish

9-  Garnish with green herbs and cherries and heavenly tasty shahi mix veg bhurji is ready to serve
