Nothing is better than the aroma which comes from the oven while baking fresh bread. This aroma is just incredible and when it is the bread, baked with caramelized onions, roasted garlic n fresh chives. Caramelized onion and roasted garlic just do a magic to any food; whether they are bread, soups or any rice preparation especially pulao or biryani.This time I thought to add fresh chives to get more flavours and colours. These kinds of masala breads always attract me to try baking them.And baking has always been a comfort zone for me.Kneading the dough, rising of it and baking it in the oven gives me pleasure
I have made this bread with multigrain atta/flour which contains wheat, gram, soybean and bengal gram.I know that Bread with all-purpose flour has better taste n texture and the one baked with this multigrain atta/flour is little denser n does not rise much but very healthy instead
I use this bread to make sandwich with masala paneer which is relished wholeheartedly in my family
Multigrain Bread With Caramelized Onion
Preparation time – 15 minutes
Raising time – total 90 minutes
First time – 60 minutes
Second time  – 30 minutes
Baking time – 4o minutes at 180℃
INGREDIENTES -:
Multigrain/flour atta(wheat,soybean,gram and millets) – 500 gms
Dry active yeast – 2 tsp or 3 gms
Lukewarm water – 2 cups approx.(water quantity may vary on the quality of atta)
Sugar – 1 tbsp or 15 gms
Salt – 1 tsp (salt is in caramelized onion also)
Red chilly flakes – 2 tsp
Fresh chives or any other greens – 1/4 cups
A well-greased bread loaf mould
INGREDIENTS For caramelized onion and garlic -:
Thinly sliced onions – 1 big sized
Finely chopped garlic – 1 tbsp
Oil – 2 tbsp
Salt 1 tsp
 
METHOD FOR CARAMELIZED ONION
 
Heat oil in a pan and add sliced onions
Cook onions at low flame
Add salt.It will help onions to caramelize fast
Stir time to time so that they cook evenly.When caramelized, add chopped garlic and cook until light brown
Add chives and stir, not to overcook.Keep them aside to add to the dough
METHOD FOR KNEADING DOUGH -:
 
Heat water to lukewarm and add sugar.Stir well until it dissolves completely
 Add flour to a big bowl and spread yeast evenly on it
Add 3/4 of caramelized onions and garlic with oil to it.This oil has flavours of onions and garlic
Add salt and  red chilly  flakes. Mix everything together with hand
Add little water at intervals and knead the dough gently for 10 minutes until it becomes soft and elastic
Cover the pan with plastic sheet and keep at warm place for 45 minutes to 1 hour
The dough will become double in size.Again knead the dough with soft hand.If the dough is sticky, use little oil and flour while kneading. Collect the dough and place it in the prepared loaf tin
Place the remaining 1/4 caramelized onions n chives on the top and cover this pan again with a plastic sheet
Keep this pan at a warm place for more 30 minutes to rise
Now bake this loaf at 180 ℃ for 40 to 45 minutes
Loaf can be checked by tapping it
Nicely baked bread gives a hollow sound
Let it be in the tin for 10 minutes
Unmould the bread and place it on a rack to cool completely
Cut slices with a bread knife and enjoy this aromatic, flavoursome bread with butter or homemade masala paneer stuffed sandwich
