PUDLA SANDWICH/HOW TO MAKE PUDLA SANDWICH/BOMBAY STREET FOOD

Pudla literally means chilla or puda or a savoury pancakes in Gujarati which is made with thin or runny besan (chickpea flour)batter. This pudla sandwich is prepared undoubtedly with bread slices which are dipped into the besan batter and cooked on both sides until golden brown. These are famous street food in many cities of Gujarat and Mumbai In the pudla sandwich a few veggies are stuffed to make them healthy and filling. The addition of a cheese slice is a bonus point that tastes absolutely awesome!

These sandwiches are very popular as evening street food. I have seen many people having them between their working hours on the roadside in the city of Mumbai. The veggies and cheese are stuffed between two chila sandwiches to add taste and flavour. All the stuff makes them very filling and delicious
Although any type of bread can be used to make them, but white bread makes them tastier. Any veggies of your choice can be stuffed but authenticity onions, capsicum, carrots and beets are used to make them tasty and colourful

INGREDIENTS REQUIRED

INGREDIENTS FOR BESAN BATTER

• Besan(chickpea flour) – 1 cup /150 gms
• Water to make the batter – 1and1/2 cups
• Salt – 1 tsp
• Red chilly powder – 1/2 tsp
• Turmeric/haldi powder  – 1/4 tsp
• Roasted (bhuna) jeera powder and ajwain – 1/2 tsp each

INGREDIENTS FOR PUDLA SANDWICH FILLING

• Finely chopped onions  – 1 large
• Finely chopped capsicum  – 1 small
• Grated carrot – 1 small
• Grated beetroot  – 1 small
• Finely chopped coriander leaves – 1 tbsp
• Cheese slices – 4 nos
• Salt – 1/4 tsp or to taste
• Red chilly flakes  -1/2 tsp or to taste
• Black pepper powder – 1/2 tsp or to taste
• Butter for cooking – 2-3 tsp or to taste

HOW TO MAKE PUDLA SANDWICH

1- Firstly,  take a mixing  bowl and make a thin(runny) batter with all the ingredients mentioned written under ‘INGREDIENTS FOR BESAN BATTER‘ When mixed keep aside at rest for 10 minutes

2- Next, take another mixing bowl and add all the veggies, salt, and spices mentioned above. Mix well and keep aside

3- Now, grease the frying pan with butter and dip the bread slices into the besan batter. Drop the two of them on hot tawa (make sure they join each other in the center)

4- Spread some veggie mix on top and press them with a spatula. Now sprinkle some butter on top and flip the slices so that the veggies cook a little

5- Flip the toast again with veggie side up and drop a cheese slice on one toast. Cover with another toast and press that with the spatula. The cheese will melt with the heat.

6- Remove the sandwich from the pan and cut it into two or four

7- Serve the tasty pudla sandwich with tomato ketchup and green chutney
