Rice Kheer/ Traditional Milk-Rice Pudding

Kheer made with rice and milk is a traditional Indian dessert which is the most popular one across the whole country.
Though known by different names in different states, yet is the most likeable of all.

It is creamy and thick pudding prepared with milk and rice.To make this dessert rice and milk together are boiled and cooked slowly to bring it to a thick consistency.I frequently prepare this kheer and sometimes serve this with khubani-ka-meetha., which is a big hit in my family

Rice Kheer
Preparation time – 30 minutes
Cooking time – 60 minutes
Course – Dessert
INGREDIENTS -:
1-   Full cream milk – 1 lt
2-  Rice(short grain/broken rice) -50 gms
3-  Sugar – 100 gms or tastewise
4-  Green cardamom powder – 1 tsp
5-  Mixed dry fruit(chopped almond, cashew nuts, raisins etc) – 2 tbsp +1tbsp for garnishing
METHOD -:
 
1-  Soak rice in water for 30 minutes
2-  In a heavy bottom, pan keep the milk for boiling
3-  Drain water from rice and add to milk.  Let it boil at slow flame. The milk will thicken and slowly reduce to half quantity
4-  Add sugar at this stage and stir well. Keep stirring at this stage. Add 2 tbsp dry fruits and cardamom powder to it.
5-  Slowly the milk will become thick and come to thick pudding-like consistency.Keep stirring at low flame to prevent the kheer from sticking at the bottom of pan
6-  Switch off the gas and bring it to room temperature.Garnish with remaining nuts and serve
