SAMAK RICE KHEER/ Samvat Ke Chawal Ki Kheer

The Samvat Ke Chawal Ki Kheer or Barnyard Millet Sweet Pudding is gluten-free dessert and is mostly prepared during festivals like the Mahashivaratri, Navratri and other fasting days. This kheer is one such simple, gluten-free and very tasty dessert. This samak kheer is too quick to cook. Actually, you don’t have to wait for the festivals to enjoy this kheer. This creamy, milky can be enjoyed any time. Though rice kheer is a very common and popular one amongst all the kheer preparations yet you would develop your taste buds quite soon over this delicious dessert with such healthy seed

  • Preparation requires soaking of samak rice for 20 minutes in warm water

INGREDIENTS REQUIRED FOR SAMAK KHEER

•  SAMAK/SAMA/SAMO RICE/BARNYARD MILLETS- 1 small bowl/50 gms
•  Milk – 1 lt or more
•  Sugar – 100 gms /to taste
•  Ghee – 2 tsp
•  Assorted dry fruits – 15-20 nuts/to taste

STEP BY STEP

1- Take a heavy bottom pan or kadahi and add ghee. Add nuts and fry them light brown. Take them out when done

2- In the same pan add soaked samak rice. Roast (bhunow) for a few seconds

3- Add milk at this stage. Allow the first boil at high flame, then bring down the temperature to low.

4- Add ilayachi powder at this stage

5- The milk will simmer for 20 minutes. Add sugar now. (Adding sugar at an earlier stage will not allow the samak rice to cook softer)

6- When the milk becomes thicker and samak rice is soft, switch off the flame and cover the pan with a lid. (If the milk is fully absorbed by the rice, add required hot milk to the kheer)

7- Add the roasted nuts to the kheer now

8- Serve the creamy samak ki kheer hot or at room temperature
