PASTA IN MUSHROOM SAUCE/NO CHEESE PASTA
Although the Indian cuisine is very complete in itself having a huge variety of dishes from all the states yet we have generously embraced the dishes from other parts of the world with so much love. We make fusion dishes taking much from them with little of ours, relishing like a religion.
Pasta dishes from Italy are one of those which is lovingly eaten here. We cook it in our own way by adding different goodies like sauces, veggies, condiments and spices. Cheeses are added to increase the richness but I avoid it many times. Most of my pasta preparations are without cheese and I substitute it with some sauce or the other. Today’s pasta recipe includes the MUSHROOM SAUCE. In the season when the mushroom is fresh and reasonably priced, I make this delectable sauce with them to use with several other dishes as a condiment like hash browns, savoury pancakes and different steaks

INGREDIENTS REQUIRED FOR BOILING PASTA
• Penne pasta – 2 cups
• Water – 6-7 cups
• Salt – 1 tsp
• Oil – 1 tsp
INGREDIENTS FOR MAKING PASTA
• Boiled pasta – 2 cups
• Mushroom Sauce – 2 cups
• Oil – 1 tbsp
• Sliced bell peppers – 1/4 cup
• Cubed zucchini – 1/4 cup
• Sliced onions – 1/3 cup
• Minced or grated garlic – 2 tsp
• Salt – 1 tsp
• Italian seasoning – 2 tsp
• Red chilli flakes – 1 tsp
HOW TO BOIL PASTA
1- In a big pot or vessel keep the water for boiling
2- Add Penne, salt and oil and allow to boil at high flame
* Oil prevents pasta to stick with each other
3- Stir pasta after intervals to help it to cook evenly without sticking
4- It takes approximately 15-20 minutes to cook pasta. You can eat a little to check the perfection
5- Strain pasta through a colander. Keep aside to use later
STEP BY STEP TO FINISH THE DISH
1- Keep a pan or wok on the flame and add oil. When heated, add minced garlic and saute
2- Add veggies one by one and saute at medium flame
3- Add salt, red chilli flakes and seasoning. Mix well
4- Next, add mushroom sauce and stir
5- Add boiled pasta and mix.
6- Cover the pan with the lid for a minute or two and the pasta with creamy mushroom sauce is ready to enjoy
