SAMAK RICE PULAO/SAMA RICE/FASTING RECIPE /सामक के चावल

Samak rice or barnyard millet is popularly cooked and eaten during fasting days especially Navratri festival in India. In our country, almost every day is an auspicious day with some of the other fast and festival. India is a vast country with rich culture and traditions. There are certain beliefs regarding the particular food items which are eaten during fasting. Samak grain is one of them. This cooks very quickly and when vegetables are added, it’s nutritive values increase

On fasting days in India grains like rice and wheat are prohibited to consume so Samak is eaten which is actually a seed not the cereal and considered as Satvik ingredient to consume on upvass days. The kheer, khichri, dalia, idlis, dhokla and pancakes are prepared with Samak rice. This has numerous health benefits as it is rich in iron, calcium, phosphorus and potassium. This rice is easily digestible and low in GI (Glycemic index) therefore safe for diabetic patients

INGREDIENTS REQUIRED

• Samak rice – 1 bowl (soaked for 30 minutes)
•  Water – 2 1/2 bowls
•  Oil – 1 tbsp
•  Boiled potatoes (cubed) – 1-2
•  Green peas/matar – 1/4 cup
•  Finely chopped carrot – 1-2 nos
•  Finely chopped ginger – 2 tsp
•  Finely chopped green chilly – 1 tsp
•  Sendha namak/rock salt – 1 tsp
•  Red chilly powder and jeera powder – 1 tsp each
•  Cumin/jeera -1 tsp
•  Freshly grated coconut – 1tbsp

HOW TO MAKE SAMA RICE PULAO

1- Heat oil in a pan and add cumin/ jeera, ginger and green chillies. Sauté them nicely

2- When sauteed, add chopped carrot and potatoes. Cook for 2-3 minutes

3- Add salt, powdered spices and soaked samak rice

4- Now add water, grated coconut and matar/peas. Stir and cover the pan with the lid. Keep the flame low

5- Allow to cook the rice for 5-7 minutes or until all the water is absorbed. Let it stay at rest for a few minutes

6- After a few minutes, open the lid and turn the rice with a fork. This will help to maintain each grain separate. Sprinkle some fresh coconut as a garnish.

7- Serve the SAMAK RICE PULAO with plain curd
