Savoury muffins with loads of vegetables is a good option for breakfast or may have as an evening snack.
They are healthy and tasty.You do not feel guilty while having them as little oil is used to them
These eggless muffins are prepared with semolina or sooji added to curd and lots of vegetables.So a complete meal in itself, keeps u fill for hours.Add of few seeds of flax and pumpkin make them healthier.
Savoury Veg Muffins
Here is the recipe
Prep. time   10 minutes
Baking time  30 minutes
Fine semolina or sooji – 1 cup
Whisked curd or dahi – 1 and 1/2 cup
Finely chopped spinach, mushrooms, cabbage and spring onions – 1 cup
Salt, pepper, red chilly powder and dried basil and oregano – 2 teaspoons each or as per taste
Baking powder – 2 teaspoons
Oil – 2 tablespoons
Flax and pumpkin seeds for topping – 1 tablespoon
Finely chopped red chillies – 1 teaspoon
Soak semolina or sooji in curd for 10 minutes.In the meantime chop all the veggies
Add all the chopped vegetables, salt and all the powdered spices and mix everything together to make a batter.The batter should not be a semi-thick consistency.
Add baking powder and mix gently to the batter
Fill the muffin moulds 3/4 with the batter.Top each with few seeds.
  Bake them for 25-30 minutes at 180℃ in a preheated oven.
