Vermicelli pulao or seviyan is a savoury dish which is ideal for breakfast. This is very healthy as lots of veggies are added to it. That’s why this dish is very filling and keeps us full for hours. Roasted vermicelli is used for this so little oil is added, making it healthier. Various Nuts and peanuts make this dish more nutritious

Vermicelli Pulao/ Namkeen Seviyan |

INGREDIENTES -:
Roasted vermicelli – 1 cup
Water – 2 and 1/2 cups
Chopped onions – 1 no.
Chopped carrots – 1/2 cup
Corn seeds – 1/4 cup
Raw peanuts – 1/4 cup
Cashew nuts – 6-7 nos.
Oil or ghee – 2 tablespoon
Salt, pepper and red chilly powder – as per taste
Cinnamon powder – 1 teaspoon
METHOD -:
1- First of all heat oil or ghee in a pan and roast peanuts and cashew nuts. Take them out and keep aside.
2- In the same oil add chopped onions followed by the carrots
.
3- Saute them well and add vermicelli/seviyan and roast them a little for a while as these are already roasted
.
4- Next, add water and corn kernals. Time to add salt and powdered spices. Stir well and cover the pan with the lid. Simmer the gas and cook for 10 minutes or until all the water is absorbed.
5- Switch off the gas and keep seviyan at rest for 5 minutes.
6- Tasty vermicelli or seviyan dish is ready. Garnish with roasted nuts and serve
1- Any seasonal Veggies can be added to this dish
2- Ghee can be used instead of oil to increase the flavours
