SIMPLE AND DIVINE DAHI PANEER /A SIMPLE CURD BASE PANEER CURRY
You don’t always need a big list of ingredients to make your favourite paneer dishes. Although paneer dishes taste divine in rich gravy based on onion-tomato masala. But if you don’t intend to cook the richer gravy all the time, this simple curd-based gravy will work amazingly. The curd has a special place in the menu of my everyday meals
This paneer dish of mine has a lighter base prepared with besan-infused curd or fresh dahi. Regular spices and seasoning have been used in this no-fancy paneer dish. Paneer has a rich texture so this light gravy is the perfect balance to make it tastier. Garam masala adds aroma and taste to the curd based gravys, especially when we sprinkle it on the prepared sabzi. This dish needs nominal ingredients and the good thing is that it prepares in no time hardly within 10-15 minutes. Let’s start making this tasty paneer dish

● INGREDIENTS REQUIRED
• Dahi/Fresh curd – 1 bowl
• Besan/ chickpea flour – 2 tbsp
• Paneer/Cottage Cheese – 250 gms
• Oil – 1 tbsp
• Water to make dahi-besan batter – 1-2 tsp
• Water for gravy – 2-3 cups
• Jeera/Cumin – 1 tsp
• Salt – 2 tsp/ to taste
• Red chilly powder(degi mirch powder) – 2 tsp
• Coriander powder – 2 tsp
• Turmeric/haldi powder – 1 tsp
• Garam masala – 1 tsp + a pinch to garnish
• Coriander leaves – 1 tbsp to garnish
• Whole green chilly – 1-2
● PROCEDURE TO MAKE DAHI PANEER
1 – Firstly cut paneer into equal size cubes
2 – Add dahi, besan, salt, red chilly powder, coriander powder, and haldi powder to a mixing bowl. Add a little water and whisk well to make a lump-free batter. Keep it aside
3 – Add oil to a kadahi and keep it on the flame. When the oil is heated, add jeera. Allow the jeera to crackle
4 – Add dahi-besan batter and stir continuously with the spatula to prevent dahi from splitting. When dahi based gravy will cook, the oil will come to the surface
5 – Next, add water for the gravy and allow to boil for 5-6 minutes by covering with a lid at medium flame. Add slit green chilly at this stage and allow a few more boils to come
6 – Soon the gravy will cook nicely and become thick
7 – Add paneer cubes and give a boil for a few minutes. Sprinkle garam masala all over the sabzi and mix well
8- Soon, the dahi paneer sabzi is ready. Serve it hot with roti or JEERA RICE
