TOMATO OMELETTE

Tomato omelette is a vegetarian version of an egg omelet. This omelet or cheela(savory pancake) is widely loved in Maharashtra, especially in Mumbai. During our stay there, we used to eat it a lot as a street food. At home, it is too easy to make in no time. Tomato omelette is purely vegetarian, where gram flour batter is used as a base and a few veggies and chunks of tomatoes are added. This omelet is the best to have for breakfast or as an evening snack to satisfy the hunger pangs before the dinner

GRAM FLOUR BASED BATTER IS A HEALTHIER AND TASTIER OPTION FOR THIS TOMATOES OMELETTE!

This healthy tomato omelette or pancake is so filling, as the base is gram flour/besan which has numerous health benefits than regular flour. This is high in protein and fiber. This Chickpea flour has about half the carbs of white flour and thus may affect blood sugar differently. Above all when a few veggies are added to it, the nutritional value increases. This is an ideal lunch box idea for the kids who dislike the veggies. They love to have this omelet because tomatoes and other veggies taste batter with the combination of besan flour pancake/Cheela

INGREDIENTS REQUIRED

•  Chickpea flour/Besan – 1 cup – 250 gms
•  Water – Sufficient enough to make a pouring consistency batter (neither thick nor too runny)
•  Chopped tomatoes – 2 nos
•  Finely chopped onions – 1 no
•  Finely chopped capsicum – 1 no
•  Finely chopped green chillies(optional)- 1 no
•  Coriander leaves
•  Salt – 2 tsp or to taste
•  Red chilly powder – 1 tsp
•  Black pepper powder – 1/2 tsp

DIRECTIONS

1- Take a broad mixing bowl and add besan/gram flour, water, salt and powdered spices. Whisk well to make a lump-free batter. Keep aside at rest for 20 minutes

2- Add chopped veggies, tomato cubes, and coriander leaves. Mix well all the ingredients

3- Heat a frying pan with 1 tsp oil or ghee. Add 1-2 ladlefuls of batter in the center and spread into a medium-thick cheela or pancake

4- Flip the pancake to cook the other side until it gets a golden-brown colour (press it with a spatula to cook evenly)

5- Repeat the same process to make all the tomato omelets like this

6- Serve the tasty and nutritious Tomato Omelets with any type of chutney or tomato ketchup
