WHOLE WHEAT FRUIT N’ NUT COOKIES

For me, the morning tea does not complete without cookies or biscuits and if the cookies are homemade, I fly high. I baked these cookies yesterday with whole wheat flour, nuts and dried berries. Though cookies made with whole wheat flour are not too fine and smooth in texture when compared with fine flour(maida) cookie. Yet I am satisfied with them as these are healthier. One more change was done that I replaced butter with ghee(clarified butter) and this decision was good as the ghee makes them crispier and fills an earthy aroma in the cookies which I love the most. Nuts give them a crunch and the dried fruits add sweet-sour flavours

INGREDIENTS

• Ghee/clarified butter – 1/2 cup
• Powdered Sugar – 1/2 cup
• Whole wheat/atta – 1 cup
• Baking powder – 1 tsp
• Assorted fruits and nuts(dried) – 1/2 cup (almonds, raisins, cranberries, goji berries, dried apricots etc)

DIRECTIONS

1- Preheat the oven at 180°C. Combine wheat flour and baking powder by sifting. Keep aside

2- Take a mixing bowl and add ghee and powdered sugar. Whisk well for 5 minutes until the mix becomes creamy white and fluffy

3- Add assorted nuts and fruits. Combine well.

4- Add flour and fold to make a dough Divide the dough into equal-sized balls. Slightly press them between palms. Prepare each like this and refrigerate for 10 min to set

5- Don’t bother if they are not of equal size or perfect round in shape. Let them be rustic. Bake the cookies for 12- 15 minutes at 180°C. Keep an eye on cookies at last moments.

6- Cool them completely on a wire rack before storing in an airtight container
