a great day starts with a great breakfast and the same happens when I bake the eggs especially with the zucchini. This combination bakes a great egg dish making my day.

Zucchini or squash is in season and I never lose the opportunity to cook this wonderfully healthy squash in some or the other way. I prepare many more other interesting dishes like zucchini bites and zucchini pancakes regularly with this healthy veggie
For this dish, I peeled out the ribbons of zucchini and set them in the baking moulds. After that beaten eggs were poured into these zucchini cups and then baked until eggs came out golden in colour

Ingredients

- Thin ribbons of zucchini – 6-8

- Eggs – 2 nos.

- Salt – to taste

- Black pepper powder – to taste

- Finely chopped spring onions – 1 tbsp
- Oil – 1 tsp
Instructions To Bake
With a vegetable peeler, peel out long and thin ribbons of the zucchini. Grease the baking moulds and set the zucchini ribbons at the base of the moulds.
Beat the eggs and add chopped spring onion, salt and pepper powder
Brush these slices with some oil or butter. Now pour some beaten eggs into the prepared cups
Bake the dish in a preheated oven for 15 minutes at 180°C or until the eggs get cooked well gaining golden colour
Serve these baked eggs in zucchini cups with garlic-dill yogurt dip
