BESAN TOAST WITH TINDA(ROUND GOURD) SLICES/ BESAN TOAST WITH CRUNCHY SIDE UP

Yesterday I saw some tenderest ever tindas(baby round gourd) with a vegetable vendor and couldn’t resist buying those. I wanted to use them as the first meal of the day as I’m obsessed to use the green veggies in my daily meal in some way or the other. As I had planned to make the besan toasts for the breakfast, so combined the two of my favourite ingredients (besan and tindas) to make these yummy besan toasts with tinda roundels.

If you are residing in Delhi or surrounding states, you must be familiar with tinda(baby round gourds). This green vegetable is easily available in the summer months and lasts till mid-November. This healthy gourd has several health benefits with its easily digestible quality. Though kids turn their nose while eating this but you can feed them making exciting dishes with this healthy green vegetable from the gourd family

Prep time – 30 minutes (prep time requires resting the gram flour batter)

INGREDIENTS REQUIRED

• Besan/gram flour – 1 cup
• Water to make batter – 1 and 1/2 cup
• Tinda/baby round gourd – 200 gms (thinly sliced)
• Salt – 1 tsp/to taste
• Red chilly powder – 1+1 tsp
• Pepper powder – 1 tsp + 1/2 tsp
• Oil/ghee/butter – 1 tbsp
• Bread slices(white or brown) – 4-5


STEP BY STEP

1- Firstly, to make the besan batter. Add besan, water, salt, 1 tsp red chilly and 1 tsp pepper powder to a mixing bowl and whisk well. Keep at rest for 30 minutes

2- Cut thin roundels of tinda and set aside

3- Heat a tawa or pan and add some ghee/oil. Dip the bread slice into the besan batter to coat both sides.

4- Add the slice to the pan and cook the downside at low flame until golden. Arrange tinda roundels on top and press them with the spatula

5- Add some ghee and flip the bread to cook tinda side. Cook till they get a golden colour

6- Once again flip the toast to tinda side up You will notice that brown marks on tinda slices. This is the sign of their roasting

7- Sprinkle some red chilly and pepper powder(optional). Remove them from the pan and serve the healthy and fulfilling besan toast with tinda slices with chutneys of your choice
