BOILED EGG MASALA /AN EGGY SIDE DISH

This dish ‘Egg Masala’ is not an exception. This is a side dish prepared with boiled eggs. An onion-tomato masala is the base for the sabzi. Onion tomato masala is roasted with the basic spices and boiled egg pieces are added to make a dry side dish. This side dish completes a meal when served with dal, any curried dish, roti, rice, or parantha. Although this egg masala can be cooked with a little curry I prefer to keep it simple and dry. I love this egg masala with a plain lachha parantha

INGREDIENTS REQUIRED

• Eggs – 4 nos
• Onion – 1 large
• Tomato  – 1 large 
• Ginger-chilly-garlic paste – 1 tsp
• Oil/butter – 1 tbsp
• Salt – to taste

WHOLE AND POWDERED SPICES
• Cumin/Jeera  – 1 tsp
• Bay leaves  – 1-2 nos
• Red chilly powder  – 1 tsp
• Black pepper powder  – 1/2 tsp
• Turmeric powder  – 1/2 tsp
• Water – 2-3 tsp

● PREPARATIONS TO BE DONE

• Chop finely onions and tomatoes

• Boil eggs to a hard consistency. When done, allow them to cool and remove the shells

• Chop the boiled eggs and keep them aside

METHOD TO COOK BOILED EGG MASALA

1- Take a pan and add oil/butter. Heat it on medium flame and add bay leaves and cumin/Jeera. Allow the spices to crackle. Now add chopped onions. Saute onions for 1 minute

2- Next, add the ginger-chilly-garlic paste and saute it with onions. Stir continuously until it gets golden brown

3- Add salt, and all the powdered spices to the onions. Stir them to roast. Sprinkle some water to prevent the spices from burning

4- Add chopped tomatoes at this stage and roast the masala until it leaves oil from the sides

5- When onion-tomato masala is roasted well, add chopped boiled eggs. Combine them  with the onion-tomato masala

6- Sprinkle 1-2 tsp of water and cover the pan. Very soon the egg masala sabzi will be ready so perfectly


7- Enjoy the boiled egg masala as a side dish with your meal
