Broccoli-Corn Sandwich
Sandwich lovers are always in search of new flavours which might be stuffed in between their bread loaves. If the filling is ready in advance, sandwiches are easiest to make breakfast, full of flavours and quite handy to eat and above all convenient to carry anywhere. That is why these have been my favourite since childhood
As far as fillings for the sandwiches are concerned, there are endless variations to relish. This broccoli-corn sandwich has lovely filling of corn kernels, pan seared broccoli and roasted garlic which are mixed with hung curd to coat well. You might find it crazy to use the roasted garlic in a sandwich but trust me this filling is incredible for those who love garlicky yoghurt dips. My love for curd and yoghurt always persuades me to use it in the sandwich fillings. Hung curd makes them cheesy n creamy which goes well with broccoli. Being a healthy and versatile vegetable, broccoli provides you with so many options to use it in numerous dishes. Hope you too would love the combination

INGREDIENTS REQUIRED
• Broccoli – 1 flower (medium-sized or 250 gms)
• Corn kernels – 1 cup/100 gms
• Hung curd – 1 cup
• Olive or any light cooking oil – 1 tbsp
• Chopped garlic – 2 tsp
• Salt – 1 tsp
• Mixed Italian seasoning – 2 tsp (dried basil, thyme, red chilly flakes and roasted garlic etc)
Bread slices – As required
• Sufficient water for blanching broccoli and corn kernels
WALKTHROUGH
1- Take a saucepan and add water. Keep on flame for boiling. When boiled, add broccoli florets and corn kernels.
2- Let them remain in the water for 2-3 minutes and transfer to a colander to drain the water
3- When cooled, chop broccoli into smaller florets. (Florets can be grated also) I like smaller chunks for the crunch
Heat oil in a pan and add chopped garlic. When roasted and turns golden brown, add chopped broccoli florets.
Pan sear or roast them and add the seasoning
4- Switch off the flame and allow to cool completely
5- Take a bowl and add hung curd. Whisk it and add pan-seared broccoli, corns, crushed pepper, and salt. Mix well
6- Apply this filling in between two bread slices and grill to make a grilled sandwich. Don’t forget to apply butter before grilling. Butter gives the sandwich a very appealing golden hues and crunch
NOTES
• Hang the curd or yogurt in a Muslim cloth for hours to get thick and creamy-cheesy hung curd
• Use of garlic is optional. If you don’t like garlic in sandwiches, just skip this
• Hung curd can be replaced with mayonnaise. Feel free to go with your choice
• Both grilled or non-grilled sandwiches go well with this filling
