Palak-Hara Pyaz Idli/ Spinach-Green Onion Idli
पालक-हरा प्याज इडली
A simple and ordinary looking idli can be converted into a tasteful and extraordinary dish, that is what palak-hara pyaz idli does. This flavourful idli is a breakfast essential for us. These are tasteful, nutritious and quite filling. This is a perfect blend of grains and vegetables. Any veggies can be added to the idli batter. In this version, I have stir-fried spinach and spring/green onions first to make a hara/green masala and then added to the idli batter. Fermented rice idli batter is always stored in my refrigerator to inspire me to cook variations with this
Whenever I add veggies to the idli batter, the outcome is a perfect healthier option and nothing much is needed with them except a glassful of tea or coffee. These breakfast idlis go well with chutneys. If the batter is ready in hand these do not take much time to steam. Make your family happy with this quick and easy idli recipe.

INGREDIENTS REQUIRED FOR HARA/GREEN MASALA
• Oil – 2 tsp
• Finely chopped palak/spinach leaves – 1 cup
• Spring onions – 4 nos
• Finely chopped ginger – 1 tsp
• Salt, red chilly powder, turmeric powder and jeera powder – 1 tsp each
• Whole cumin/ jeera – 1 tsp
• Mustard seeds – 1 tap
INGREDIENTS FOR IDLIS
• Fermented Idli Batter – 2 cups
• Palak-Hara Pyaz Masala – 1 cup
DIRECTIONS FOR PALAK-HARA PYAZ MASALA
Heat oil in a pan and add cumin and mustard seeds. Allow them to splutter
Add chopped ginger and onions of spring onions and saute
Add chopped spinach/palak leaves and greens of spring onions. Saute for a minute
Add salt, haldi/ turmeric powder and spices mentioned above. Give a good stir to mix well
Switch off the flame and allow hara masala to cool down
DIRECTIONS TO MAKE PALAK-HARA PYAZ IDLI
Take fermented idli batter and add hara masala
Mix well to make a batter, neither too thick nor runny
Add 1 tbsp batter to each idli mould and steam till perfection
Serve palak-hara pyaz idlis with coconut chutney
