CUCUMBER-CARROT RAITA/KHEERA-GAJAR KA RAITA/ A SUPER COOL YOGHURT-BASED SIDE DISH
The spring season is going on and we are bidding goodbye to the wintertime in North India. A little heat can be felt now in the noon time. The curd-based dishes are liked and relished with the lunch. Yughurt/Curd based raitas have cool effect on stomach, so these have made their place in the lunch thali once again
Veggies and fruit raitas feel great and satisfying, providing freshness and several vitamins and minerals. This cucumber-carrot-based raita is not an exception. Red carrots are still available from the vegetable vendors. So not losing the opportunity to use them, I prepared a tasty raita with the freshest combo.
Both cucumber and carrots not only add colors but also add nutritional value to the tasty cucumber carrot raita. A spice mix prepared with roasted cumin and dried mint leaves (pudina-bhuna jeera masala) makes it gut-friendly. The ex-factor of this raita is the tempering or tadka with cashews and a few spices. This tadka adds a wonderful taste to the raita carrying it to the next level

● INGREDIENTS REQUIRED
• Curd/Yogurt/Dahi – 500 gms
• Cucumber/Kheera – 1 large (grated)
• Carrot/Gajar – 1 medium (grated)
• Coriander leaves – 1 tbsp
• Water – 2-3 tbsp
• Salt – TO taste
● INGREDIENTS FOR TADKA/TEMPERING
• Any cooking oil – 1 tbsp
• Mustard Seeds/Rai – 1 tsp
• Whole red chilly – 1 no
• Pudina-bhuna jeera masala – 1 tsp or to taste
• Cashew/Kaju – 5-6
● METHOD
1- Whisk curd to a smooth consistency. Add 2-3 tsp of water if the curd is too thick
2- Add grated cucumber, carrots, and finely chopped coriander leaves
3- Combine the veggies with the curd and prepare for tadka, the tempering
TEMPERING/TADKA
1- Heat oil in a tadka pan and add mustard seeds, followed by whole red chilly, and cashews
2- When the three ingredients are well roasted, add this tadka to the cucumber-carrot raita
3- Serve this tasty cucumber-carrot raita in your main course with other dishes
