Moong Dal Chaat
This is a very interesting preparation with green moong dal or whole moong dal from Punjab region. This variation is cooked dry, means all the liquid is allowed to evaporate while cooking and the main thing is that it should neither be al dente nor mushy after cooking.
A simple tadka or tempering of cumin seeds and asefotida is prepared and then soaked dal is added to it. It is then cooked at very low flame until all the water is evaporated. When it is prepared, it is eaten as a chatpati dal chaat added with onion, tomatoes and lemon juice. This cooked dal is also used as stuffing for poories or paranthas to make cooked moong dal ki stuffed poories

Ingredients For Dal
• Whole moong dal (soaked overnight) – 1 cup
• Cooking oil – 1 tbsp
• Cumin seeds/jeera – 2 tsp
• Asafoetida /heeng – 1 tsp
• Salt – 1 tsp
• Red chilly powder – 2 tsp
• Coriander powder – 2 tsp
• Garam masala powder – 2 tsp
• Water – 3-4 cups
Ingredients for Dal Chaat
• Cooked dal
• Finely chopped onions – 2 tbsp
• Finely chopped tomatoes – 2 tbsp
• Finely chopped green chillies and coriander leaves
• Chaat masala – 2 tsp
• Lemon juice – juice of 1 lemon
Instructions For Dal
1- Heat oil in a kadahi and add jeera and heeng one by one
Add all the powdered spices and roast for few seconds
Add soaked dal and stir. Time to add water. Firstly add 3 cups and give 1 boil at high flame. Then bring it at low flame and cover the kadahi
° Avoid to stir dal otherwise it will become mushy
Slowly water will evaporate and dal will be cooked to perfection.
° If dal is still too hard, add some more water and cover the pan
When dal is cooked, serve with poories or parantha or you can make a chatpati chaat with it

When dal is cooked completely, transfer it to a bowl
