CHEESY BROCCOLI BALLS/ AN AMAZING PARTY STARTER

Savory little balls of broccoli are truly amazing to taste. These are soft and cheesy as two different cheeses have been added to the broccoli.  First is the cottage cheese/paneer which gives the balls a body, and the second one is the processed cheese that makes it rich and creamy

Brocolli floods over the vegetable market during the winter season. Instead of summer, we get juicer veggies during this time of the year. The fresh and lovely green-colored broccoli inspires me to make various dishes with it. From soups to starters and breakfast dishes to main courses many dishes with broccoli add to the beauty of the table

Today I prepared the baked balls with broccoli. Brocolli was blanched as a first step, making it a little tender. It was then shredded to the smallest bits. Fresh bread crumbs helped to absorb the moisture.  Cottage and processed cheeses had added richness. The seasoning had lifted over the taste. These broccoli balls were baked at 180 degrees for 30 minutes or until they had become golden and crisp. Easy-to-make broccoli balls are a hit snack and a starter for the party

Makes – 16-18 balls

INGREDIENTS REQUIRED

• Broccoli head – 1 no (300 gms)
• Paneer/cottage cheese  – 150 gms
• Cheese cubes – 2 small
• Bread crumbs from  – 4 bread slices without edges
• Olive oil or any other oil to bind – 1 tbsp
• Salt – 1+1 tsp
• Crushed black pepper  – 1 tsp
• Red chilly flakes  – 1 tsp
• Water to rinse and blanch broccoli  – sufficient enough

PREPARATIONS TO BE DONE

1 – Cut medium-sized broccoli florets and rinse well
2 – Boil water in a pan and add brocolli florets. Blanch them for just 1 minute

3- Seave them through a colander and pat dry. Don’t discard the broccoli water, use it in the soups or curries

4 – Chop or blend or grate finely the blanched broccoli florets *do as per your convenience

5 – Remove the corners of bread slices and blend them into fine crumbs

6 – Grate paneer/cottage cheese. Keep them aside

7 – Grate processed cheese and keep it aside

METHOD TO MAKE BROCCOLI BALLS

1- Take a mixing bowl and add finely chopped broccoli

2- Add grated paneer/cottage cheese

3- Add bread crumbs to the broccoli

4- Now add grated cheese at this stage

5- Add salt, pepper powder,  and red chilly flakes

6- Combine well all the ingredients

7- Add 1 tbsp oil (olive oil) to bring together all the ingredients. * if you eat egg, use one of them for binding in place of oil

8- When combine all the ingredients,  keep it at rest for 10 minutes

9- Make small-medium-sized balls and adjust them on a baking tray

10- Preheat the oven to 180 degrees and keep the baking tray in the oven

11- Bake the cheesy broccoli balls at 180 degrees for 30 minutes *or until they are golden crisp(baking timings can vary)

12- Tasty and healthy cheesy broccoli balls with tomato ketchup, GREEN CHUTNEY and HUNG CURD DIP
