On the weekends there is a midmeal call for something crisp and deep-fried which you can’t ignore. This happens on those days when we used to eat brunch. And then the evening tea is definitely accompanied by some heavy snacks whether baked or fried. There are some humble snacks that do not require much preparation. These are prepared instantly and need a few ingredients that are readily available in our kitchen
Suji-Bread vada or fritters is one of them which I like to make frequently This vada does not need hours for soaking and grinding. Only two main ingredients suji(semolina) and bread of any type work wonderfully. These are soaked for just 20 minutes in curd with some aromatics and there you are! An absolute deep-fried snack is ready in under 30 minutes

● INGREDIENTS REQUIRED
• Fine Suji/Semolina – 1 cup
• Fresh Bread crumbs – 2 cups (white or brown)
• Curd/dahi – half cup
• Water – 2 tsp or more
• Finely chopped onions – 1 large
• Finely chopped ginger – 1-inch piece
• Finely chopped green chilies – 1-2
• Finely chopped coriander leaves – 1 tbsp
• Whole cumin/jeera – 1 tsp
• Saunf/Fennel seeds – 1/2 tsp
• Red chilly powder – 1 tsp
• Crushed black peppers – 1/2 tsp
• Salt – 2 tsp
• Soda-by-carb/khaane vala soda – 1/2 tsp
• Oil for frying
● PREPARATIONS TO BE DONE
• Add bread slices to a grinder and grind them to fine crumbs
• Chop finely onions, ginger, and green chilies
● METHOD
1- Take a mixing bowl and add dry ingredients like suji, bread crumbs, salt, and Soda-by-carb. Combine well with the help of a spoon
2- Next, add all the whole and powdered spices. Mix well with suji mix
3- Add all the chopped veggies like onions, ginger, chilies, and coriander leaves
4- Now add curd and a little water. Combine well and make a dough-like consistency with your hand (The dough should neither be too tight nor runny)
5- Keep at rest covering for 20-25 minutes so that the suji mix absorbs all the moisture (you can refrigerate this mix in summer to set)
6- Keep a kadahi with oil on the gas stove, while taking a portion of dough on the palm. Flatten it with the other hand and make a hole in the center. Make all like this
*A whole in the center helps the vada to cook evenly from all sides
7- When the oil is heated, drop one vada and deep fry at medium flame. You can fry two vadas at a time.
8- Flip the vade in the oil carefully to fry them golden brown on both sides
9- When perfectly fried, take out vade from the oil and keep it on an absorbent paper
10- Serve the tasty crisp Suji-Bread vade with chutneys of your choice. I like to eat them with green chutney
