Ladi Pav/ Dinner Buns

Ladi pav is round or square buns baked together with the equal weight of dough chunks which are pulled apart to use. They are flat at the bottom and famous as dinner rolls. These buns are very soft like feathers when baked. Very popular across the country and make the best pairing with bhaji as a street food.
At home whenever we plan to cook pav bhaji, ladi pavs are also baked. These are quite easy to make if you have learned to handle the dough. When these buns are baking in the oven, you cannot stay away from the heavenly smell and you just want to eat them. They are simply incredible and mouthwatering

Now coming to the recipe of these yummy pavs. For these buns proofing, the dough properly will ensure that your buns are baked nicely. Well risen dough and it’s kneading skill will make it a perfect one. I have tried baking them several times. In the beginning, they were not made to perfection but now I have come to know that baking buns is not a rocket science..Right amount of ingredients and kneading the dough well will make your buns perfectly soft and flaky

 

Preparation time – 120 minutes
Baking time – 20 minutes
Type – Dinner Rolls
Yield – 6 buns

Preparations include  * Kneeling and Proofing the dough 2 times
First time proffing for 60 minutes and the second timefor 30 minutes at a warm place
INGREDIENTS -:
 
Plain flour – 400 gms + 2 tbsp for dusting the dough
Milk – 3/4 cup + 1 tbsp for brushing before baking
Milk powder – 2 tbsp
Vegetable oil – 2 tbsp
Sugar – 1 tbsp
Salt – 1 tsp
Dry active yeast – 1 tsp or 5 gms
Melted butter to apply on baked buns – 1 tbsp (this will give a shine to them)
1 baking mould or tray

 

METHOD -:

Preheat oven to 200 degrees for 10 minutes
Mix water,milk sugar and yeast

Stir well and keep at rest for 10 minutes

After 10 minutes this mix will become frothy
Add milk powder to flour and combine well

Add yeast mix little by little and knead the dough by stretching and combining the dough
The dough will be sticky. Add oil and knead the dough for more 10 minutes

Gradually the gluten will form and dough will come together
Put this dough in a bowl apply some oil and cover with a kitchen towel

Place this bowl at a warm place for 1 hour to rise double in size

Again punch the dough to release air and knead again with the help of flour for 5 minutes.Be gentle with the dough

When the dough comes together, divide the dough into 6 portions of equal size
Make balls of these portions and set them in the prepared baking mould for more 30 minutes.
Again the dough portions will rise double in size

Brush the balls with milk and bake them at 200 degrees for 20 minutes
When baked apply some butter on them

Tasty, soft and fluffy buns are ready to enjoy
