Paneer dish with methi and coconut is such a tasty and unique one with distinct flavours. Paneer is absolutely a versatile dairy ingredient that you can pair anything with this to prepare wonderful dishes
Paneer dishes are fondly eaten in my family, so I have to experiment with this fresh Indian cheese, also known as Cottage Cheese. A few other paneer dishes like paneer-do-mirchi-dish is such ones with unique flavours and texture.
This paneer dish is without onion and tomatoes, yet very tasty and rich. In this dish, I have used kasoori methi, coconut milk and coconut powder. Coconut balances the pungency of methi and gives it a unique flavour. The best part of this dish is that it prepares in no time with a few ingredients easily available in the kitchen pantry.

INGREDIENTS -:
1- Paneer/cottage cheese( cut in cubes) – 250 gms
2- Coconut milk – 200 ml (I used Homemade brand)
3- Coconut powder( desiccated) – 1 tbsp
4- Kasoori methi (dried fenugreek leaves) – 2 tbsp
5- White pepper/safed mirch powder – 2 tsp
6- Salt – to taste
7- Oil – 1 tbsp
8-  Water for gravy – 1 cup or to your choice

METHOD-:
1- Heat oil in a pan and add kasoori methi and sauté. Keep the flame low to avoid burning
2- Add white pepper and coconut powder and sauté for a minute
3- Add coconut milk,  1 cup of water and salt
4- Stir continuously otherwise coconut milk will split
5- Slowly the gravy will become thicker
6- Time to add paneer cubes and allow the gravy to boil. (Adjust the quantity of gravy to your choice. add more water if you want a runny gravy)
7- Stir 1 or 2 times and switch off the gas
8- Tasty methi coconut paneer dish is ready to serve with roti or parantha
