MEXICAN RICE / SPANISH RICE

Mexican rice/Spanish rice or Red rice is a bowl full of flavours which consists obviously the rice with some beans, tomatoes, corn kernels, some basic spices like paprika, oregano, cumin powder etc. and a few fresh vegetables. 

MEXICAN RICE/SPANISH RICE WITH INDIAN TOUCH /HOW OUR DESI-STYLE DISH DIFFERS FROM AUTHENTIC MEXICAN RICE

I call them Mexican rice with Indian touch as this is completely different from authentic Tex-Mex flavours.  As we love to transform dishes according to our desi taste, so this one also is not an exception

Authentic Mexican rice is prepared with their own locally produced long-grain rice with high content of starch. This rice is toasted in oil and butter as a first step until it becomes brown and then the tomato puree along with some water, vegetable or chicken broth and minimal spices are added. Any kind of beans or meats are their favourite add-ins to their favourite rice dish

MY VERSION TO MAKE MEXICAN RICE

This colourful eye-catching rice bowl has also some Mexican essentials like kidney beans, corn kernels with some other veggies. Tomatoes in the puree form add taste and reddish-orange colour . Adding Some tomato ketchup to the rice dish tastes great. I have prepared this dish by adding the separately cooked rice to the sautéed veggies. This dish can be prepared as a one-pot meal also by adding all the ingredients together in a pan. Both methods make an awesome rice dish which is popularly known as Mexican Rice.  Let’s make the super yummy easy Mexican Rice Dish

Cook time –  15-20 minutes

INGREDIENTS REQUIRED

• Steamed or boiled rice  – 2 bowls
• Boiled kidney beans(rajma) – 1/2 cup
• American corn kernels  – 1/2 cup
• Finely chopped onions – 1/2 cup
• Finely chopped capsicum  – 1/2 cup
• Finely chopped garlic  – 2 tbsp
• Tomatoes  – 3 -4 medium-sized
• Tomato ketchup  – 3-4 tsp /or to taste
• Red chilly powder/paprika – 2 tsp
• Oregano (dried or fresh as available)- 2 tsp
• Cumin powder  – 2 tsp
• Salt – 1+1 tsp or to taste
• Spring onion greens/cilantro for garnish – 2 tbsp
• Cooking oil/butter – 2 -3 tbsp

PREPARATIONS TO BE DONE

1 – Boil rice in sufficient water with 1 tsp of salt. When boiled, strain them through a colander and keep them aside(make sure that rice should not be overcooked and mushy)

2 – Blend tomatoes to make a pure

HOW TO MAKE MEXICAN RICE

1- Keep a wok or a kadhai on flame and add oil. When the oil is heated,  add chopped garlic. Saute garlic for a few seconds (Avoid browning them)

2 – Add chopped onions and saute.  Avoid overcooking

3 – Next, add chopped capsicum and sauté at medium flame

4 – Now add corn kernels and stir them for a while

5 – Time to add tomato puree.

6 – Also add salt, red chilly powder, oregano and cumin powder and tomato ketchup

7 – Combine all the ingredients well and allow to cook until the tomato puree is cooked

8 – When the tomato puree is cooked and reduced, add boiled rice

9 – Add cooked kidney beans now

10 – Also add spring onion greens or celentro and combine nicely

11 – Flavoursome Mexican rice is ready. Garnish them with spring onion greens or cilantro and serve hot with tomato-onion salsa and nachos
