What could be a better way to eat colourful, fresh and seasonal veggies other than the super appetizing mixed vegetable sabzi. This dry mix vegetable dish is a combination of several seasonal veggies which includes cauliflower, cabbage, carrot, beans, potatoes, onions, tomatoes and the capsicum. To prepare this mixed veg sabzi all these vegetables are cut into cubes and cooked till perfection. The veggies are accompanied with some aromatics and a few regular spices. Soooo ! this eye-catching mix vegetable sabzi is mildly spiced and must be feed to the kids to make them habitual of eating this kinda multi veggie preparation

INGREDIENTS REQUIRED

• Cauliflower/gobi – Small flower head(chopped)
• Cabbage (shredded) – 1 bowl
• Chopped capsicum – 1 large
• Chopped potatoes – 2-3
• Chopped green beans – 8-10
• Chopped carrot – 1 large
• Sliced spring onion bulbs – 2-3
• Salt – 2 tsp/to taste
• Cooking oil – 1 tbsp

SPICES AND AROMATICS REQUIRED

• Red chilly powder – 1 tsp
• Coriander powder – 1 tsp
• Haldi/turmeric powder – 1 tsp
• Garam masala – 1/2 tsp
• jeera powder – 1/2 tsp
• Jeera/whole cumin – 1 tsp
• Finely chopped ginger – 1 tsp
• Finely chopped garlic(optional) – 1 tsp
• Finely chopped green chillies(optional) – 1 tsp
• Fresh coriander leaves for garnish
• Spring onion greens (finely chopped)

HOW TO MAKE MIXED VEGETABLE SABZI

1- Heat oil in the kadahi and add whole cumin/jeera. Add chopped ginger, garlic and green chillies

2- Next add potato cubes and cauliflower. Bhunow for 2-3 minutes

3- Add cubed carrots and cook for a few minutes. Now add green beans and capsicum. Saute the veggies for a minute or two

4- Next add sliced spring or regular onions and saute for a while (avoid overlooking so that these do not lose the crunch)

5- Next, add shreaded cabbage and saute for a while

6- Next, sprinkle all the dry spices evenly over veggies except the garam masala

7- Allow the spices to cook for a second. Now combine all the veggies nicely

8- Next, add salt and garam masala and mix well. Cover the kadahi for 2-3 minutes

9- Finish the dish with coriander leaves and spring onion greens

10- Serve the tasty and health mixed vegetable sabzi with DAL TADKA in the main course
