MUSHROOM FRIED RICE/ HOW TO MAKE MUSHROOM FRIED RICE

Mushroom and rice together make such a simple yet amazing and succulent rice dish. The flavours are our most favourite, the Indo Chinese or so-called Desi Chinese. A few sauces provide this dish such flavour.  Several fresh seasonal veggies along with the healthiest fungi give this rice dish the rainbow vibes. Mushroom is the star of this rice dish. Winters provide fresh and good quality mushrooms. This must be added to the everyday menu because of the numerous health benefits.

The procedure of this lovely fusion dish has two parts. One is to cook the rice separately by boiling and another one is to saute a few seasonal veggies to add to the cooked rice. And finally comes a super delicious and healthy rice dish which is loaded with miscellaneous fresh vegetables. INGREDIENTS REQUIRED TO MAKE MUSHROOM FRIED RICE

•  Rice – 1 cup/150 gms(washed and soaked)
•  Water for boiling rice – 1 lt
•  Button mushrooms – 200 gms(chopped)
•  Chopped onions – 1 large
•  Chopped carrots – 1 large
•  Chopped capsicum – 1 large
•  Chopped spring onions with greens – 2 nos
•  Finely chopped beans – 1/4 cup
•  Finely chopped ginger – 1 tsp
•  Finely chopped garlic – 2 tsp
•  Salt – 1 tsp+ 1 tsp
•  Black pepper powder – 1 tsp
•  Finely chopped green coriander with stems – 2 tbsp
•  Cooking oil – 1 tbsp

INGREDIENTS FOR THE SAUCE MIX
•  White vinegar (circa) – 1 tbsp
•  Light soya sauce – 1 tsp
•  Red chilli sauce – 1 tsp
•  Green chilli sauce – 1 tsp
•  Tomato ketchup – 1 tsp

HOW TO MAKE MUSHROOM FRIED RICE

1- Firstly, mix all the sauces to make a sauce mix and keep aside to use later

2- Add water,  salt and soaked rice to an open pan and boil until it cooks to perfection

3- Drain the rice through a colander and keep aside time use later

4- Now, take a kadahi or a wok and add oil. When heated, add Ginger-garlic. Cook for a while (don’t brown)

5- Add chopped carrots, onions and beans and saute at high flame

6- Next, add chopped capsicum and spring onions(green part would be added in the end)

7- Add chopped mushrooms and saute at high flame.

8- Now add salt, pepper powder and the sauce mix. Give a good stir

9- Add boiled rice and mix all the ingredients together

10- Give a finial touch with coriander leaves and spring onion greens.

11- Serve hot the yummiest Mushroom Fried Rice
