Pineapple upside down cake is a classic one.This cake is soft, moist and delicious with goodness n freshness of fruits.This cake gives a perfect company to evening tea.This cake is relished by all especially the kids enjoy it the most.I have used canned pineapples and cherries in it which add extra sweetness and flavours to it
Pineapple Cake
Preparation time – 15 minutes
Baking time – 40 minutes

INGREDIENTES -:
 
All purpose flour/maida – 1 cup or 125 gms
Softened butter – 100 gms
Granulated sugar – 80 gms
Eggs – 2 nos.
Baking powder – 1 teaspoon
Baking soda – 1/4 teaspoon
Canned pineapple rings – 8 nos.
Deseeded canned cherries – 10 12 Nos.
Round cake mould (lined and greased with butter paper) springform cake tin will be the best for this cake
METHOD – :
 
First of all set pineapple ring slices and cherries at the bottom of mould as shown in the picture below
Chop remaining pineapples for the batter and keep aside.
Seave flour with baking powder and soda 2 times and keep aside.
Preheat oven to 180℃. In the meantime whisk butter and sugar until creamy and fluffy.
Add eggs 1 at a time and whisk well.
Add sieved flour and fold gently.Add chopped pineapples and mix gently.
Pour the batter over set mould and bake for 40 minutes at 170℃ or the toothpick comes out clean
Let the cake cool down completely and unmould the cake.
