SUPER CRISP MOONG DAL VADA/AHMEDABADI MOONG DAL VADA

Moong dal vade is a perfect treat on a rainy day. This is so flavoursome, crunchy, and crisp that you suddenly become too hungry to eat every bit of them. This famous snack from Gujarat is sold on streets  everywhere in Ahmadabad, Surat and Vadodara. At homes  this is prepared easily as an evening snack to be enjoyed with the tea.

This vada or fritters is a deep fried snack which is prepared with moong dal. Any moong dal yellow or green can be used to make them. The process starts with the soaking and grinding of dal. A few aromatics and regular spices do the magic. The classic taste comes with the addition of fresh coriander leaves and the crushed seeds of coriander. A small quantity of split urad dal helps in aeriation into the batter and rice helps to make them extra crisp. The real magic behind the extraordinary taste is the fluffy batter which is obtained after whisking for the longer period. Let’s making the yummy moong dal vada with me

INGREDIENTS REQUIRED
•  Moong dhuli/split moong dal – 1 cup
•  Dhuli urad/split urad dal – 1 tbsp
•  Raw rice – 1 tbsp
•  Coriander seeds – 1 tbsp
•  Black pepper corns – 6-7
•  Salt – 1 and 1/2 tsp
•  Red chilly powder – 1 tsp
•  Finely chopped onions – 1 large
•  Finely chopped fresh coriander with stems – 1/2 cup
•  Finely chopped ginger – 2 tsp
•  Finely chopped green chilies – 2 tsp
•  Whole green chilies – 3-4
•  Oil for deep frying – Sufficient enough

PREPARATION TO BE DONE

1 – Wash moong dal, urad dal and rice well and soak for 2 hours
2-  Ground coarsely coriander seeds and black pepper corns
3-  Chop finely onions, fresh coriander, green chilies, and ginger

HOW TO MAKE MOONG DAL VADA

1-  Firstly, grind dals and rice together coarsely (with a bite). Grind them without water because we need a thick paste

2-  Whisk the batter with your hand or a wire whisk for 5 minutes in one direction.

3-  After whisking for 5 minutes you will notice that the batter has become fluffy and light coloured. Cover it for 20 minutes

4-  Now add chopped onions, coriander leaves, ginger, green chilies salt, and spices and whisk again for 3-4 minutes

5- Whilst, heat oil to medium flame and drop the small portions into the oil with the help of your hand or a spoon

6- When the vade are deep golden fried, take them out of oil. Fry all like this. Also fry some green chilies with them

7- Adjust the flame time to time. Too much heat will not get proper frying from inside on the other hand at low flame vade will absorb too much oil

8- Now remove all the vade from oil and serve hot with RAW MANGO-MINT CHUTNEY
