Tofu-Apricot Salad Health In One Plate

A salad plate is my favourite portion of the meal. Eating a salad every day is a great way to get the recommended amount of fruits and vegetables.
This colourful plate invites me the most. I love to add some seasonal fruits to my salads, which are not too sweet but juicy enough, like peaches or apricots. I am fond of tofu also, the bean curd, and I add it to my diet in some way or the other

WHY SHOULD I ADD TOFU TO MY DIET?
Tofu is an excellent food from a nutritional and health perspective. This is a good source of protein and contains all essential amino acids. It is also an excellent source of iron and calcium. This is a vegan product, and if you are allergic to dairy or following a weight loss program, this is beneficial for you
I  grill the tofu, which goes quite well with fresh and juicy apricots. A few other veggies like cucumber and tomatoes add the colour as well as nutrition to the salad, and last but not least, a few microgreens add the freshness and the nutritional benefits to the salad. I love to add organic bean microgreens, which I grow in my pots. I dress my salad with honey, lemon, olive oil, crushed pepper, and a few thin slices of fresh red chili, which goes well with the honey and sweet apricots

● Ingredients

● Tofu or bean curd – 200 gms(sliced)

● Apricots or Khubani – 7-8 nos.(sliced)

● Cucumber – 1 medium sized (sliced)

● Tomatoes – 2-3 medium sized (sliced)

● Olive Oil – 2 tsp

● A few bean microgreens and basil leaves

● Salt and pepper – to taste

● Ingredients For Dressing

● Olive oil – 2 tsp

● honey – 1 tsp

● lemon juice – 1 tsp

● fresh red chilli – 1 no(thinly sliced)

 ● Instructions

 1 – Take a grill pan and add oil, and  heat it

2 – Add tofu slices and lightly grill them on both sides by turning. When done, keep them aside to cool

3 – Place  all the sliced veggies and fruits neatly on a salad plate

4 – Place grilled tofu on them, and finally, microgreens on the top

5 – Add some fresh mint or basil leaves for more freshness

6 – Mix the ingredients for dressing in a bowl and drizzle over the salad
