VEGETABLE TEHRI /UP STYLE TEHRI /A RUSTIC MIXED VEGETABLE RICE DISH

This desi/rustic Tehri or rice dish is a combination of mixed seasonal veggies and rice. This is a homely rice dish which is part of every day’s meal. This is so filling that actually you don’t need anything else with this and the plain curd or raita will do the best. This one-pot meal is very easy to cook especially on those lazy days when you don’t intend to cook much

Originally this vegetable Tehri is the Indian farmers’ meal. While doing work on their farms, peasants use to cook this rice dish with all the veggies they grow in their fields. They cook this dish in a desi manner in the big open vessels on the temporary chulahs made with bricks. All the ingredients are available in their own fields so the taste is rustic yet divine… Sharing the recipe of this desi style vegetable Tehri prepared in the pressure cooker as a one-pot meal. But this tehri can be prepared in an open pan or vessels by just covering with a normal lid.

INGREDIENTS REQUIRED

•  Rice (any type) – 1 cup (washed and soaked for 30 minutes)
•  Water – 2 and 1/2 cups
•  Thick curd – 1 cup
•  Salt – 2 tsp
•  Red chilly powder – 1 tsp
•  Green chilies – 2 nos
•  Finely chopped ginger – 1 tsp
•  Jeera/Cumin seeds – 1 tsp
•  Roughly chopped coriander leaves and its stem – 1bunch

VEGETABLES REQUIRED

•  Onion – 1 large
•  Peas/matar – 1/2 cup
•  Cauliflower/gobi – 4-5 small florets
•  Cabbage/pattagobi – 1/2 cup
•  Potatoes – 2 medium
•  Carrot/gajar – 1-2 (cubed)
•  Beans –  5-7 nos

STEP BY STEP METHOD

1- Keep the pressure cooker on flame and add oil. When oil is heated, add cumin/jeera. Allow jeera to crackle

2- Add chopped ginger, garlic, and green chilies. Saute for a while. Now add veggies one at a time and roast/bhunow (first those that take longer time to cook)

3- Add curd, salt, and all the powdered spices. Also add chopped green chillies. Combine well and add curd. Mix everything with the ladle

4- Add soaked rice followed by the water. Mix well gently

5- Next, add chopped coriander leaves and stems and mix well. The water will absorbs the aroma and flavours of fresh coriander

6- Close the lid of the cooker now. Allow the 1 whistle to come and switch off the flame immediately

7- Let the steam release by itself and open the lid. Gently turn the rice with a spatula or a fork so that rice grains do not break

8- Mix vegetable Tehri is ready to enjoy. Serve this rustic rice dish with plain curd or boondi ka raita

NOTES AND TIPS

*If you want to make this vegetable tehri in an open pot, add 3 cups of water and cook it at low flame by covering the pot with a normal lid

*In winters a wide range of veggies are available. Feel free to add radish and turnip to this desi style rice dish
