A 2 Layer Roti pizza 🍕🍕
Every night after a wholesome meal, there is always some leftover. Why let it go to waste? With some imagination and a little effort, you can create mouth-watering treats with leftovers. If you have left some food you always think that how I would eat them the next day— but there are ways to transform this food into a treat
I too became innovative when a few roties/chapatis were left from yesterday’s dinner. I refrigerated them to use in some way or the other. And the next day was dedicated giving them a makeover of pizzas. All this ended with my pizza cravings which had been raising head for the past few days

INGREDIENTS REQUIRED
• Leftover roties/flatbread – 4
• Finely chopped capsicum – 1/2 cup
• Finely chopped onions – 1/2 cup
• Corn kernels – 1/4 cup
• Grated carrot – 1/4 cup
• Grated mozzarella cheese – 1/2 cup or to choice
• Homestyle Pizza-Pasta sauce – 4-5 tsp or to taste
• Mixed Italian seasoning – 2 tsp
• Red chilly flakes – 1 tsp
• Basil leaves for garnish
STEP BY STEP
1- Take a pan and sprinkle some water on it. ( A few drops will prevent the roti from burning)
2- Next, place 1 roti/chapati on it and spread pizza sauce as 1st layer
3- Place chopped veggies as 2nd layer
4- Spread grated cheese as 3rd layer
5- Place the 2nd roti on cheese and press slightly with hand
6- Repeat all 3 layers of sauce, veggies and cheese again
7- Sprinkle seasoning and red chilly flakes over it
8- Switch on the flame now at very low and keep the pan with the lid on
9- After 5 minutes you will see the cheese has melted. Take this roti pizza out and cut into slices
10- Sprinkle some Basil leaves, seasoning, red chilly flakes and enjoy double layer roti pizza 🍕🍕
NOTES
- A sprinkle of some water on the pan prevents the roti/chapati from burning
- You can cook veggies a little instead of using raw (Though uncooked veggies give a good crunch)
- You can grill pizza in the oven for 5 min or until the cheese melts
