Tikki Chana Chaat |
Chaat is a part of street food culture in our country. I think that chaat or street food is the only food which joins the whole Indian subcontinent together. Our evenings do not pass without eating some of the other chaats. This is the only one preparation which has all the tastes and flavours to satisfy our taste buds. This is sweet, sour, spicy and tangy in one plate
In fact, I would say that each time of the day is the chaat time in India. We can relish it any time of the day. A chaat is a plateful of savoury snacks topped with sweet-sour chutneys and sometimes spoonfuls of curd too. Sprinkle of chaat masala is a must and a handful of farsaan or namkeen added to it makes it heavenly tasty and lip-smacking.

The variety of chaat is endless but today I planned to make aalu tikki chaat as my evening snacks. As the aalu tikki is relished with different chutneys but I served this with chana also.I had some chana sabji left from my lunch. The combination of aalu tikki and chana became incredible

INGREDIENTS-:
1- Medium sized potatoes – 200 gms
2- Corn flour – 1 tbsp
3- Chana dal – 2 tbsp (washed and soaked)
4- Salt, red chilly powder,garam masala powder and chaat masala powder – 2 tsp each
5- Tamarind/imly chutney – 2 tbsp
6- Mint-coriander chutney – 2 tbsp
7- Oil – sufficient for deep frying
8- Cooked chana sabji – 1 cup
9- Chaat masala for topping
10- Onion rings – for garnishing

METHOD -:
Boil potatoes.Peel them and keep aside
Boil chana dal al dente (not mushy)

Grate boiled potatoes to avoid lumps
Add cornflour, and 1 tsp of salt and powdered spices. Knead potatoes well
Add remaining salt and spices to boiled chana dal and keep aside
Apply some oil in hands and divide potato dough in equal sized balls
Flatten potato balls on hand and fill 1 tsp chana dal into each flattened dough
Cover each dough to make the ball again
Flatten the ball between both hands to shape like tikki

Shape all tikkies and keep in the fridge for 10 minutes to set
Heat oil at high flame and fry each tikki golden brown

Serve the tikkies with chutneys, cooked chana and chaat masala
