BREAD POHA /AN EASY TO MAKE FILLING BREAKFAST

The bread poha is a unique preparation using thick slices of bread. Loaded with several veggies, this poha is cooked so colourfully that invites you to make it quite often. Usually, I cook rice poha/flattened rice for my breakfast. This breakfast becomes healthier when I add a lot of veggies to it. This variation of poha with bread can be enjoyed as the first meal of the day as well as the evening snack with chai. This is very filling and easy to cook in no time. This bread poha is cooked with thick slices of bread which are usually discarded by most of us as no one wants to eat them. As the name suggests, this poha requires the bread slices as the main ingredient which are chopped into small bits. The moisture from various veggies makes it softer.I sprinkle some water as a finishing touch so that all the ingredients come together. In this way, this does not turn into a soggy one but cooks each bit separated(khila-khila)

INGREDIENTS REQUIRED

• Thick slices of bread – 4 nos (any type ..White, brown or multigrain)
• Oil – 2 tbsp
• Finely chopped onions – 1 large
• Finely chopped tomato – 1 large
• Finely chopped capsicum – 1 large
• Finely chopped carrot – 1 medium
• Finely chopped green chillies – 1 tsp
• Boiled corn karnals – 1/2 cup
• Raw peanuts – 1/4 cup
• Cumin/jeera – 1 tsp
• Salt – to taste
• Red chilly flakes – 1 tsp
• Crushed black pepper – 1 tsp
• Lemon juice – juice from 1 lemon
• Water – 1 tbsp
• Fresh coriander leaves – 1 tbsp

HOW TO MAKE BREAD POHA
1- Tear out the bread slices into small bits and chop finely all the veggies. keep them aside

2- Heat oil in a kadahi and add peanuts. Fry them till golden and remove them from the oil

3- Into the same oil add cumin/jeera. Allow the cumin to splatter and add finely chopped onion. Bhunow onions for a while and add carrots and capsicum

4- Roast the veggies for a few seconds retaining the crunch. Now add corn karnals and chopped tomatoes

5- Add salt, all the powdered spices, and lemon juice and mix. mix. Now add salt and mix nicely with other ingredients

6- Next, add the bits of bread. Sprinkle some water and combine all the ingredients together

7- Cover the pan with a lid for 2 minutes so that bread gets a little softened but not mushy

8- Add the fresh coriander leaves and fried peanuts to the cooked poha as a finishing touch

9- Serve the tasty bread poha with some crunchy sev in the breakfast or as an evening snack
