Poha/pohay or flattened rice is cooked in many states of India. But you will find the difference in their names and the taste also though the base is the same, that is chiwda. The sub-ingredients added while making it vary from region to region due to their availability. The poha is a versatile ingredient that makes several dishes from crisp snacks to breakfast items and from main  course dishes to sweets also

Today I am sharing the recipe of Kanda poha or poha with onions, a classic dish from the states of Maharashtra and Madhya Pradesh. Actually, we can’t place the Kanda poha in any particular course. This can be enjoyed at any time of the day.
To make Kanda poha, poha is the main ingredient and onions help to taste the next level. Peanuts add the crunch and a few regular spices and aromatics like curry leaves, ginger, chilies, and lemon juice make its taste delectable. Let’s start making the easiest to make comfort food Kanda Poha

INGREDIENTS REQUIRED FOR KANDA POHA/POHAY

•  Poha/Chiwda – 2 cups
•  Onions – 2-4 medium
•  Finely chopped ginger – 1/2 tsp
•  Raw peanuts/mungfali – 3/4 cup
•  Curry leaves – 10-12
•  Mustard seeds – 1 tsp
•  Jeera/cumin – 1 tsp
•  Finely chopped green chilies – 1-2
•  Salt – 2 tsp
•  Red chilly powder – 1 tsp
•  Haldi/turmeric powder – 1 tsp
•  Coriander leaves – 1-2 tbsp
•  Any cooking oil – 1-2 tbsp
•  Lemon juice from half of it

HOW TO MAKE KANDA POHA

1- Add poha to a colander and rinse with water for a few seconds. Keep aside for 10 minutes so that it absorbs the moisture

2- Heat oil and add mustard seeds. Allow them to crackle. Next, add jeera and curry leaves.

3- Add peanuts at this stage and fry them

4- Next, add chopped onions followed by ginger and green chilies. Fry onions for a minute. (Avoid overcooking because we want them crunchy and juicy)

5- Next, add salt, haldi/turmeric powder, red chilly powder, and lemon juice. mix all the ingredients well.

6- Now, toss the soaked poha with a fork and add to the onions. Combine all the ingredients well

7- Finish kanda poha by adding coriander leaves

8- Kanda Poha is ready to serve. I serve kanda Poha with Usal
